- 7.8 oz cocoa cookies (like pan di stelle)
- 8.5 tbsp butter (melted)
- 1.3 cups whipping cream
- 2 tbsp powdered sugar
- 8.8 oz mascarpone
- 1 tbsp Nutella
- 7.8 oz Nutella®
- to taste hazelnuts

To make a delicious mascarpone and Nutella cheesecake without gelatin, you will need a few simple ingredients and no baking.
The first thing to do is make the crunchy cookie base.
In a blender, put the cookies like pan di stelle and blend them until they become a fine powder.
Pour the cookies into a bowl, add melted butter, and mix well until fully combined.
Pour the cookies onto the base of a baking pan lined with parchment paper. I used a springform pan and just lined the bottom with parchment.
Compact with a spoon until the cookies form a smooth, even disk.
Put the base in the refrigerator for at least half an hour.
After half an hour, prepare the mascarpone cream.
Whip the cream until stiff peaks form. If unsweetened, add two tablespoons of powdered sugar, then gradually add the softened mascarpone and a tablespoon of Nutella, continuing with the electric mixer.
You will get a firm and consistent cream.
Take the baking pan with the crunchy cookie base and pour in the mascarpone Nutella cream. Level the cream and put the mascarpone and Nutella cheesecake without gelatin back in the refrigerator.
To form the final layer, heat the Nutella for a few seconds in the microwave. This step will make it easier to form a smooth and compact disk.
Pour the Nutella over the surface of your cheesecake and put it back in the refrigerator for a couple of hours. Finally, if desired, decorate with some hazelnuts. Your mascarpone and Nutella cheesecake is ready!
