Air Fryer Roasted Chicken and Potatoes

Air fryer roasted chicken and potatoes; tradition and innovation are the protagonists of this recipe. The main dish that most reminds us of our childhood, the one that when I was little, which was in the last century, was reserved for Sunday lunch. In this version, however, it is cooked super quickly and with surprising results with this trendy gadget in the kitchen. Eeee, if my mom had had the air fryer! She, who didn’t like to cook, would have thrown even the socks in to dry! Since I bought it, I haven’t turned on the oven once, with great savings in time and electricity. So in the family, we haven’t missed out on those oven-cooked dishes anymore, which we often skipped because I didn’t have the patience and time to wait for it to heat up. What an invention this air fryer!

Ingredients

  • 14 oz chicken drumsticks, skinless, raw
  • 14 oz potatoes
  • Half teaspoon sage (ground, in powder)
  • Half teaspoon rosemary (ground, in powder)
  • to taste extra virgin olive oil
  • to taste salt
  • 1 tablespoon lemon juice
  • to taste water

Steps

  • Prepare the chicken, which will be much more flavorful if you let it marinate for a couple of hours before cooking. Mix the rosemary, sage, garlic powder, and salt together, put the whole mixture in a bowl with 2 large pinches of salt, 2 tablespoons of extra virgin olive oil, and a tablespoon of lemon juice. Create an emulsion by beating all the ingredients with a fork.

  • Place the chicken pieces in the bowl and coat them well in the spice and oil emulsion. Let them rest for at least half an hour, preferably a couple of hours.

  • Boil the potatoes al dente in salted boiling water. If they are new and small potatoes, you can leave the skin on, washing it very well beforehand. Older and larger potatoes, on the other hand, need to be peeled and already cut into pieces. Cook them for about ten minutes. This will allow you to get potatoes that are soft inside and crispy outside. A real treat!

  • Begin cooking the chicken by placing it in the basket of the air fryer, making sure not to overlap the pieces. Cook using the chicken function, or at 200°C (392°F) for 15 minutes.

  • After this time, open the basket, turn the chicken pieces over, and add the well-drained and well-oiled potatoes. Finish cooking still at 200°C (392°F) for 15 minutes. Open, turn the potatoes over, and cook for another 5 minutes if necessary.

My advice

To avoid encrusting the fryer basket too much and struggling to clean it, you can lift the grate and cover the basket with baking paper or aluminum foil, so you can remove it at the end of cooking and dispose of the chicken fat.
