Pasta with frozen peas is a first course that always helps when you have no idea what to have for lunch or dinner, a simple but very tasty and economical dish that is also vegetarian and vegan without the addition of parmesan.
A first course with very few ingredients, and frozen peas kept as a stock in the freezer are really convenient.
There are different variations, today I propose the simplest version, the one my mom used to make.

Ingredients for Pasta with Frozen Peas
- 11.3 oz pasta (dry)
- 10.6 oz frozen peas
- 1.8 oz onion (white or golden)
- 2 tbsp olive oil
- 1 oz parmesan
- to taste salt
- to taste pepper
Steps
To make pasta with frozen peas, the first thing to do is to finely chop the onion.
Next, in a low, wide pan, add a drizzle of oil and the onion, let it sauté for a few seconds without browning the onion. This will be the base of your pasta with frozen peas.
At this point, add the peas still frozen, salt, pepper, and cover the peas with hot water. Let it cook on low heat for about 15 minutes. If the water dries up completely, add more little by little.
The peas are cooked when they are tender and the outer skin is no longer annoying in the mouth.
Boil the pasta in plenty of salted water for just 5 minutes, it will finish cooking together with the peas, this step will make it super creamy and tasty. I used penne rigate, but tubetti or broken spaghetti are also absolutely perfect.
Drain the pasta and transfer it to the pan with the peas, add a ladle of pasta cooking water and cook over medium heat, as it dries add more cooking water. Stir occasionally, when the cooking is to your liking, turn off the heat, taste and adjust the salt and pepper.
Once the heat is off, add the parmesan and mix.
Serve the pasta with frozen peas hot and steaming.
