- 14 oz eggplant
- 1/4 cup fresh spreadable cheese
- 4 oz prosciutto
- 2 oz arugula
- 1 oz Parmesan cheese (grated or sliced)
- 10 green olives (pitted)
Steps
To make your Fast Grilled Eggplant Roll with Prosciutto and Arugula, the first step is to grill the eggplant.
Trim the eggplant, cut it into slices about 1/4 inch thick. Grill them on a griddle or a simple pan, the slices should be well browned on both sides. Lightly salt the eggplant slices.
On a work surface, place a rectangle of plastic wrap and lay the slices of eggplant, slightly overlapping them to create a rectangle without spaces.
Now you can proceed with the filling, spread the spreadable cheese on the eggplants, layer the slices of prosciutto on top, then a layer of arugula, Parmesan cheese sliced or grated, and finally the pitted olives sliced.
