Ingredients
- 8.5 oz cooked lentils
- 1 zucchini (boiled or raw)
- 1 cup cherry tomatoes (mixed)
- 1 fresh spring onion (preferably Tropea)
- 10 olives
- to taste olive oil
- to taste vinegar
- to taste salt
- to taste
Steps for Summer Lentil Salad with Easy and Quick Zucchini
To make your Summer Lentil Salad with Easy and Quick Zucchini, first, wash and trim the zucchini, then boil it in plenty of hot water for 5 minutes. If you like, you can also leave it raw or sear the slices for a few minutes on a grill or pan.
Slice the zucchini and transfer the slices to a bowl.
Slice the cherry tomatoes, I used red and yellow ones to make it even more colorful.
Thinly slice the spring onion; if you find Tropea, use it for a sweeter taste.
After preparing all the ingredients, drain the lentils and rinse them quickly under running water.
Add all the ingredients to the zucchini, season with a pinch of salt, a couple of turns of olive oil, and a splash of vinegar or balsamic vinegar.
Tear 3 basil leaves and mix well to flavor all the ingredients.
