Mayonnaise with hard-boiled eggs is a simple and safe alternative to classic mayonnaise made with raw eggs. In this version, the eggs are already cooked – hard-boiled – making the recipe ideal for those who prefer to avoid raw ingredients or do not want to deal with pasteurization. The result is a creamy sauce, with a delicate flavor, perfect for accompanying cold dishes, meat or fish entrees, salads, and sandwiches.
To prepare it, you need few ingredients. It is made in less than 5 minutes using a mixer or an immersion blender. The eggs can be cooked either in a classic pot with water or directly in an air fryer as I did: at the end of the recipe, you’ll find both cooking methods, both simple and quick.

- 2 eggs
- 3.5 oz Greek yogurt
- 1 tbsp lemon juice
- 1 tsp mustard

Steps
To prepare the mayonnaise with hard-boiled eggs, start by cooking the whole eggs with the shell in the air fryer. Place them directly in the basket, setting the temperature to 266°F for 15 minutes. Alternatively to the air fryer, you can cook the eggs in a pot with water. Place the eggs in cold water, turn on the heat and bring to a boil. Once the water boils, slightly lower the heat and cook for about 9 minutes.
Once cooked, immediately transfer them to a bowl with cold water and ice. This step serves to stop the cooking, but also to make the shell easier to remove.
After a few minutes, gently peel the eggs and transfer them to the immersion blender glass. Add the Greek yogurt, lemon juice, a pinch of salt, and a teaspoon of mustard, which, in addition to giving flavor, will help make the sauce color more like traditional mayonnaise.
Blend everything for a few minutes, until smooth and creamy.
This mayonnaise with hard-boiled eggs can be served with potatoes, as in the proposed version, or used to accompany main dishes, salads, or sandwiches. Enjoy!
Tips for you
• Storage: mayonnaise with hard-boiled eggs can be stored in the refrigerator in an airtight container for about 2-3 days. Since it is made without raw eggs, it is safer, but it is always good to consume it within a short time.
• Variations: you can flavor it with chopped fresh herbs like parsley, basil, or chives, or add a pinch of garlic powder for a stronger taste.
• Consistency: if the mayonnaise is too thick, you can add a splash of water or lemon juice. If you want a richer consistency, you can slightly increase the amount of yogurt.
• Pairings: it is perfect with grilled vegetables, fish, cold meat, potatoes or as a filling for sandwiches and wraps.
• Yogurt: Greek yogurt can be replaced with well-drained regular yogurt, but the Greek version gives a thicker and creamier consistency.
