The summer omelette flatbread with feta and cherry tomatoes is a quick, fresh, and incredibly practical recipe, perfect for when you have little time but don’t want to compromise on taste. With only four main ingredients – a flatbread, feta, cherry tomatoes, and eggs – you get a complete dish, ideal for a light lunch, a summer dinner, or even to take on the go.
It’s an easy fridge-cleaning preparation, ready in less than five minutes, followed by a quick cooking time in the air fryer, for those who want an even faster result without turning on the oven. Alternatively, it can also be baked in a traditional oven, simply adjusting time and temperature.

Ingredients
- 1 flatbread
- 1 feta
- 2 eggs
- 10 cherry tomatoes
- to taste salt
- to taste pepper
- to taste basil

Steps
Take a pan of about 8 inches in diameter and lay the flatbread inside, making it adhere well to the bottom and sides.
Place the whole feta in the center and crack two eggs on the sides. You can also add as many eggs as you prefer.
Cut the cherry tomatoes in half and distribute them on top, adding a pinch of salt and pepper. No need to add oil: the cooking will already be perfect this way.At this point, we can choose the cooking method:
• in the air fryer, set to 374°F for 12-13 minutes
• in a fan oven, cook at 392°F for about 20-25 minutes, if static 410°F.
Once ready, gently mash the feta with a fork to mix all the ingredients. The eggs will be almost hard-boiled, but if you prefer them softer or creamier, you can slightly shorten the cooking time. The ingredients are already cooked (flatbread, cherry tomatoes, feta), so it only changes how you prefer the eggs.
Complete with a few fresh basil leaves, cut the omelette flatbread into four slices and serve. Enjoy your meal!

Cooking and Food Safety:
This recipe cannot in any way be undercooked. All the ingredients used, except for the eggs, are foods that require no cooking or only minimal exposure to heat. Feta is a cheese that is commonly consumed without cooking, as are cherry tomatoes, which are perfectly edible even raw. The flatbread typically requires only a couple of minutes per side on a hot plate: in our recipe, it cooks for over 12-25 minutes, resulting in more than just warmed. The eggs, with the indicated times and temperatures (374°F for over 12 minutes in the air fryer or 392°F for 20-25 minutes in the oven), reach a consistency similar to hard-boiled eggs, so decidedly well-cooked. Even with shorter cooking times, the eggs would still be perfectly safe, as they can also be consumed soft-boiled.
A Fridge-Cleaning Recipe:
One of the great advantages of this preparation is its extreme versatility. The suggested ingredients are just a base to start from: we can customize it with what we already have in the fridge. Grilled vegetables, different cheeses, cold cuts, or legumes can easily replace or accompany those suggested, making the omelette flatbread different each time, but always tasty.
