Ingredients
- 10.5 oz ricotta
- 5.3 oz Greek yogurt
- 2 eggs
- 2.1 oz sugar
- 3 tbsp cornstarch
- 3.5 oz chocolate chips
- to taste hazelnut cream
- to taste hazelnut crumbs
Tools
- Air Fryer
Steps
Take a large bowl and put the eggs, sugar, ricotta, Greek yogurt, and cornstarch. Mix well until you get a homogeneous mixture. Add the chocolate chips and stir gently. Transfer the batter to a baking pan lined with parchment paper. If you want, you can add more chocolate chips on top! These quantities are suitable for an 18 cm pan like this one: pan link.
A trick for perfect cooking in the air fryer: put 3.4 oz of water at the bottom of the tray before placing the pan with the batter. This will create steam during cooking, which will help keep the cake soft and moist, preventing it from becoming too dry.
Cook in the air fryer at 320°F for 25-30 minutes, until the surface is nicely golden. *it is not necessary for the air fryer to have 2 heating elements (top and bottom), even this one used for the recipe has only one upper.
If you want to bake it in the oven, you can do it at 340°F for about 40-45 minutes, but keep an eye on the surface, which should be golden, just like in the air fryer.
Once ready, let the cake cool for at least 3 hours, then put it in the fridge to rest.
To make it even more delicious, you can garnish the cake as you like. I chose to add a hazelnut cream, slightly heating it in the microwave to make it more fluid and easier to pour. For a crunchy touch, I then added some hazelnut crumbs around the edges. Feel free to customize the cake decoration with whatever you like or leave it as it is!
Enjoy your meal!
Tips for you
✔ Using water in cooking will increase humidity and make the cake very soft and creamy. Attention: do not pour water if using an air fryer with dual heating elements.
✔ For even better baking, I recommend using metal pans, which are excellent heat conductors and allow for even heat distribution during baking. This way, the cake will bake evenly even on the bottom, with a golden surface and a soft interior. If using a silicone pan, remember that it may take a few extra minutes of baking. You can find the 18 cm pan here: pan link.
✔ Storage: after cooling the cake, I recommend storing it in the refrigerator to keep it fresh and soft longer. You can put it in an airtight container or cover it with plastic wrap to prevent it from absorbing other odors in the fridge. The cake can stay in the fridge for 2-3 days, maintaining its moist and soft consistency.
✔ Variations: if you want to make the cake even more delicious, you can add white chocolate flakes or chopped nuts to the batter. You can also replace Greek yogurt with another type of yogurt (low-fat or whole) for a slightly different texture.
✔ Air fryer and heating elements: it is not necessary for the air fryer to have two heating elements (top and bottom) to achieve even baking. Even with only one upper element, as used in this recipe, the result will be perfect. The air fryer works by circulating hot air, cooking the food quickly and evenly, creating that golden crust we love. So, do not worry if your air fryer has only one element: just follow the instructions in the recipe for perfect baking!
✔ For uniform baking in the oven: if baking the cake in the oven, make sure to preheat it first to 350°F. To prevent the cake’s surface from burning, cover it with aluminum foil halfway through baking and then remove it in the last 5 minutes to brown the top.
✔ For this recipe, I used the air fryer COSORI 4.7, which you can find on Amazon clicking here.
