Here’s a dish ready in less than 15 minutes directly in the air fryer! Very easy to make, delicious and complete and balanced: just put all the ingredients in the air fryer basket and follow the instructions below in the recipe. To make it, we will need salmon fillets (with or without skin, as you prefer), previously boiled potatoes, and cherry or date tomatoes. So easy and quick that it can save your lunch or dinner! Alternatively, you can cook everything in the oven by placing the ingredients in a baking dish; instructions can be found below. In the oven, the temperature and times will change, taking longer plus the preheating time required.

- 2 salmon fillets
- 3 medium potatoes

Steps
To prepare this complete and balanced dish, start with the potatoes: carefully peel them and cut them into regular wedges for even cooking. Transfer them to a pot with cold water and bring to a boil. Once boiling, cook them for about 15 minutes, just enough to slightly soften them: they should not fall apart but be cooked outside and still firm inside.
Meanwhile, prepare the other ingredients. Wash the cherry tomatoes and cut them in half. Place them in a small bowl suitable for the air fryer: it’s important to cook them separately to prevent the liquids from dispersing over the rest of the ingredients.
Now take the basket of the air fryer and neatly arrange: the two salmon fillets, the previously blanched potatoes, and next to them, the bowl with the cherry tomatoes. Season each ingredient with a drizzle of extra virgin olive oil and a pinch of salt. If you like, you can also add aromatic herbs to taste (such as thyme or rosemary).
Cook everything in the air fryer at 375°F for 12 minutes. The salmon will be soft and juicy, the potatoes slightly crispy on the outside, and the cherry tomatoes perfectly wilted.
Alternative cooking in the oven:
If you prefer to cook in the oven, you can arrange the ingredients on a baking sheet lined with parchment paper, keeping a similar arrangement. The cherry tomatoes, even in this case, should preferably be cooked in a small earthenware dish that will then be placed on the larger tray along with the rest. Cook in a ventilated oven at 400°F for about 20-22 minutes or until the salmon is well-cooked and the potatoes are golden.Once cooking is complete, plate carefully, finish with a sprinkle of black pepper if desired, and serve immediately. A simple, nutritious, and delicious dish, perfect for a light but flavorful lunch or dinner. Enjoy your meal!

Alternatives:
This recipe is extremely versatile and can be customized according to your tastes or what you have at home. Instead of salmon, you can use other types of fish like sea bream, cod, trout, or sea bass fillets: always choose fish in slices or fillets that are not too thick to ensure even cooking in the indicated times. If you don’t have potatoes, you can replace them with other vegetables such as green beans, zucchini, carrot sticks, or broccoli, already blanched or slightly pre-cooked to shorten cooking times in fryer or oven.
Spices to taste:
You can also enrich the dish with spices (paprika, curry, pink pepper) or fresh herbs to add even more fragrance and flavor.
