What I propose today is not the classic nachos recipe, but a much more light and balanced version, even more delicious and ideal if you’re looking for a tasty snack with few calories. Made with thin tortillas, cooked in an air fryer or oven, and served with delicious fresh sauces, perfect even for a diet: these light and crunchy nachos are ideal for an appetizer, a quick dinner, or sharing with friends.
They are prepared in less than 10 minutes and are much lighter and even more tasty than the classic ones: once tried, you’ll always make them this way. Below I also reveal the total calories with a comparison to the classic ones. They can be cooked in the oven or in the air fryer for an even faster version.

Steps
To prepare the light nachos, start by cutting the tortillas into strips and then into triangles. To speed up, you can stack the strips and then make diagonal cuts: this way, you will quickly have many triangles ready for cooking.
Transfer them to a bowl, season with extra virgin olive oil, salt, and paprika (you can use the spices you prefer), then mix well with a spoon to distribute the seasoning evenly.
Cook the nachos in an air fryer at 356°F for about 5 minutes, until they are crispy and golden. Alternatively, you can cook them in a static oven at 392°F for 8-10 minutes, checking towards the end of cooking to avoid burning them.
In the meantime, prepare the sauces:
• Avocado Cream: place the Greek yogurt, sliced avocado, lemon juice, extra virgin olive oil, and a pinch of salt in a blender. Blend everything for a few minutes until smooth and creamy.
• Light White Sauce: simply mix Greek yogurt with lemon juice, extra virgin olive oil, and salt. The consistency will be similar to a light and fresh sour cream.
Once ready, transfer the nachos to a serving plate. Arrange the sauces on the sides above the nachos, so they are visible and easy to serve. In the center, add the tomato diced very small (you can season it with a drizzle of oil and salt if you prefer). Finally, pour the melted cheese in the center directly over the nachos: you can melt it for a few seconds in the microwave.
Serve immediately and enjoy your light, crunchy, and flavorful nachos!
Tips for you
• Calories: the entire recipe has about 1080 kcal, so about 270 kcal per serving (for 4 people), including the two sauces and melted cheese. By comparison, the traditional version with fried corn nachos, sour cream-based sauces, guacamole sauce, and cheese can reach 500-800 kcal per serving. The difference is notable, especially if you’re looking for a tasty but light idea for an appetizer or quick dinner.
• You can personalize the light nachos with the spices you prefer: sweet or smoked paprika, curry, turmeric, chili… according to your tastes. Spices do not significantly affect calories, so you can use them freely to give more character to your nachos.
• Even the ingredients of the sauces can be adapted: if you don’t like avocado or want to further lighten the recipe, you can prepare just the white sauce based on Greek yogurt. Also, the cheese is optional: in my version, I used light cheese, but you can omit it or replace it with a vegetable or protein alternative of your choice.
