The mini tomato tarte tatins are delicious savory tartlets made with few ingredients and are very easy to make. They are named after the French upside-down apple cake, born from a mistake, which instead turned out to be a great discovery. To make the tarte tatins, or the “mini” ones, you will need to assemble everything upside down. A real child’s play! I chose a very simple savory version, requiring only some tomatoes and few other ingredients. We can choose to use the air fryer for an even faster version or the oven by increasing temperature and time (you’ll find both cooking methods below in the recipe). They are so tasty everyone will love them!

Ingredients
- 1 roll rectangular puff pastry
- 10.5 oz cherry tomatoes
- 1 egg yolk
- as needed balsamic glaze
- as needed extra virgin olive oil
- as needed salt
- as needed oregano
- as needed stracciatella or burrata
- as needed basil leaves

Steps
AIR FRYER:
Remove the internal grid of the air fryer basket and line it with a sheet of parchment paper, tucking it well underneath to ensure stability during cooking.Drizzle a little oil in 4 well-spaced points on the parchment paper, then balsamic glaze, oregano, and salt. Cut the tomatoes in half and place them on the 4 points, forming circles.
Meanwhile, cut puff pastry into discs slightly larger than the 4 circles obtained. Cover the tomatoes with the puff pastry discs and prick the surface with a fork. Finally, brush with an egg yolk.
Reinsert the grid into the air fryer drawer and cook at 340°F for about 13 minutes. In this case, there’s no need to flip halfway through.
OVEN:
For the oven version, simply line a baking sheet with parchment paper and proceed with the same steps. Cooking will be at 355°F for about 20-25 minutes.
Once cooking is finished, it is necessary to wait at least 30 minutes before removing the tarte tatins from the parchment paper! This step is crucial because removing the paper immediately will prevent the ingredients from solidifying and they’d completely crumble.
At this point, we can serve the tarte tatins: remove them from the parchment paper using a spatula and flip them upside down. They will be beautiful. We can serve them as they are or garnish with stracciatella and a few leaves of basil. Enjoy your meal!
Tips for You
✔ As an alternative to stracciatella, you can serve them with Genovese pesto.
✔ It is necessary to wait at least 30 minutes before removing them from the parchment paper, otherwise they will completely crumble.
