Eggs in purgatory are a simple and comforting traditional dish that become even more quick and practical to prepare with the air fryer! 🍳✨
In just 10 minutes, they are ready to serve, without smells or smoke in the house, and the great thing is you don’t even need to pre-cook the sauce: just put everything together and let the air fryer do its job.
I’ll reveal all the tricks for perfect cooking, and if you prefer, you can also make them in the oven by increasing the time and temperature. A smart and delicious dinner-saving idea!

Ingredients
- 4 eggs
- 7 oz tomato passata
- to taste grated parmesan
- to taste extra virgin olive oil

Steps
First, place a small clay pot directly in the air fryer basket. This type of pot is ideal because it retains heat evenly and gives a gentler and more enveloping cooking to the sauce and eggs, just as tradition demands.
Let it heat at 356°F for 5 minutes in the air fryer, so when we add the ingredients, they will be immediately enveloped in the right heat.After the time has elapsed, open the fryer and pour into the pot: tomato passata, a pinch of salt and pepper, and a drizzle of extra virgin olive oil. Carefully break the 4 eggs over the sauce, taking care not to break the yolks. Finally, add a light sprinkling of grated parmesan on top — not too much, just to add flavor without overpowering the eggs.
Close and cook in the air fryer at 356°F for about 10 minutes, or until the whites are well cooked and the yolk is still runny (but you can extend slightly if you prefer a firmer yolk).
OVEN COOKING: follow the same procedure, but cook in a preheated static oven at 392°F for about 15-18 minutes, always in the clay pot or in a suitable baking dish. Check the cooking after 15 minutes to adjust according to the desired egg consistency.Serve the eggs in purgatory hot, accompanied by crispy bruschetta: perfect for dipping in the sauce and yolk 🍳

✨ If you want an extra touch, add a pinch of chili pepper to the sauce before cooking: it will add character without overpowering the flavor of the eggs!
🫙 You can enrich the sauce with oregano or dried basil for an even more Mediterranean aroma.
🍞 The bruschetta? Try rubbing garlic on the crispy surface and drizzle with olive oil: simple but perfect!
🧀 For a richer version, you can add some pieces of mozzarella or scamorza in the last 2 minutes of cooking: perfectly gooey!
⏱️ If you like your eggs softer, check the cooking after 8 minutes, or if you prefer them firmer, leave them for 12 minutes or more: remember every fryer can vary slightly in times!
