Ready for an unbaked dessert with cocoa cookies and whipped cream? The warm season is approaching and the desire to turn on the oven is already fading, so I thought of revisiting this old recipe that I had on the blog since 2011. This recipe comes from a dear old friend of mine, Laura, who often made it when she had dinner guests and hadn’t thought about a dessert. She always remembered having some cocoa cookies in the pantry and whipping cream. The old photo was actually taken at her place in her kitchen, but I’ll spare you because it doesn’t look like the same dessert anymore.

This dessert with whipped cream and cocoa cookies is prepared very quickly, just the time to whip the vegetable cream, arrange the cookies in a baking dish, and create the various layers of cream and cookies. The resting time in the fridge must be respected, otherwise, you risk not being able to get the 6-8 servings indicated because it needs to stabilize. It’s worth noting that only two ingredients are needed to make this easy, quick, and super delicious dessert!

Steps for the Dessert Recipe with Cocoa Cookies and Whipped Vegetable Cream

  • We begin the preparation of the dessert with cocoa cookies and cream starting with the latter. Take the cold vegetable cream from the refrigerator and work it with a mixer until almost fully whipped. Place it back in the refrigerator for about ten minutes.

    After this time, we can proceed with the actual preparation of the dessert. Take a baking dish, preferably square and as high as a cookie placed vertically. Arrange the cocoa cookies on the base of the baking dish and then place more cookies to create the edge. Try to keep them as still as possible.

    Retrieve the whipped vegetable cream from the refrigerator and, with a spoon, distribute it over the cookies. Try to soak each corner of the base well, so the cream can combine the cookies into one. The dessert with cocoa cookies and cream I made has four layers of cookies.

    Create the various layers of cookies and cream until completely filling the baking dish. Arrange them uniformly in the baking dish: this will also help you when you go to portion the dessert with a spatula to serve it at the table. We are ready for the two-hour rest in the refrigerator, on the lowest shelf.

Tips and Variations:

As already mentioned, I recommend not over-whipping the vegetable cream, so it can soak the cookies to become a soft and compact dessert. You can moisten the cookies with a little milk, using a pastry brush. You can add some chocolate chips, if you like, creating a crunchy part to enjoy spoonful by spoonful.

Respecting the resting times is crucial for the success of this dessert. The two hours of rest in the fridge are very important, indeed. As already written, the vegetable cream must be cold from the fridge to be worked at its best.

You can replace the vegetable cream with regular whipping cream and vary the type of cocoa cookies. For example, it is delicious also with Orociok. I used Pan di Stelle because I like them, and they are suitable for making many desserts. Those little stars are delicious and make a beautiful decoration for this easy and quick cake.
