Ingredients

  • 4 slices very thin chicken (4.2 oz)
  • to taste breadcrumbs
  • 2 eggs
  • to taste flour
  • 2.1 oz provola cheese
  • 3.5 oz tomato sauce
  • to taste salt
  • to taste extra virgin olive oil

Steps

  • Let’s start preparing the chicken slices. Take the very thin chicken slices and dip them first in flour, then in beaten eggs, and finally in breadcrumbs. Once breaded, add a pinch of salt to season them.

    Meanwhile, prepare the rest for later: mix the tomato sauce with a drizzle of oil and a pinch of salt. Separately, cut the provola cheese into slices.

  • Air Fryer: preheat the air fryer to 375°F and place the breaded slices in the basket and add a spritz of oil. Cook them at 375°F for 8 minutes. At this point, open the basket, turn them over and top each slice with tomato sauce and provola slices, then cook for another 3 minutes.
    Oven: preheat the oven to 400°F and place the breaded slices on a baking tray and add a drizzle of oil. Cook for about 10-12 minutes, until they are golden and crispy. Turn them over and top with tomato sauce and provola slices, and cook for another 5 minutes or until the cheese is completely melted and stringy.

  • In both cases, the result will be a crispy slice on the outside and tender on the inside, with the rich flavor of pizzaiola and the cheese melting in a perfect embrace. Enjoy your meal!

Tips for you

✔ As an alternative to the air fryer and oven, you can easily fry the slices in plenty of seed oil, then finish cooking with the oven, air fryer, or even in a pan if you wish.

✔ You can add the tomato sauce as is or cook it beforehand.

✔ I recommend not using baking trays or parchment paper for air fryer cooking: this way the meat will be perfectly golden with even cooking.
