For Christmas, you have to make potato ‘pandorini’: they are scenic, delicious but above all easy and quick to make. They will make a great impression on the table and will be loved by everyone. They are made with simple ingredients, although the filling can vary with what you like best. The potato ‘pandorini’ are perfect during the Christmas holidays, for Christmas Eve dinner, Christmas or New Year’s Eve. If you don’t have the molds for mini pandoro, you can easily use muffin molds; they will be so delicious that they will be gone in no time.

The pecorino cheese fondue is so easy to make that you will literally need 2 ingredients and 1 minute on the stove. Ingredients
- 14 oz potatoes
- 2 tbsp grated Parmesan cheese
- 1 egg
- 1.76 oz provola cheese
- to taste extra virgin olive oil
- to taste salt
- to taste breadcrumbs
- 2.5 oz grated Pecorino cheese
- 1.35 oz milk

Steps
First, boil the potatoes until soft. Once ready, mash them into a bowl and add the grated Parmesan cheese, salt, a drizzle of EVO oil, and an egg. Mix until you get a velvety mixture.
Brush a drop of oil on the mini pandorini molds (find them here: link) and add the breadcrumbs, making sure it adheres well everywhere.
Place a full spoon of potato and spread it on the bottom. In the center, add 3 cubes of provola (or the cheese you prefer) and close with more potato mixture, leveling the surface.
Pour a drizzle of oil on top and cook in the air fryer at 356°F for 15 minutes, or in a preheated oven at 374°F for about 25 minutes.
Meanwhile, make a super simple fondue: in a small saucepan, pour the grated Pecorino cheese and milk, stir and turn on the low flame, continuing to stir for 1 minute. And here is an extremely easy fondue ready.
Once the potato ‘pandorini’ are ready, turn them onto a plate (be careful not to burn yourself, I recommend waiting at least 10 minutes) and serve with the pecorino cheese fondue on top. They will be even more beautiful and scenic. Enjoy your meal!
