The pumpkin parmesan is an alternative to the original recipe; in this case, you use the pumpkin sliced along with other simple ingredients. It is a very tasty and extremely easy recipe to make. You won’t even need to cook the pumpkin beforehand (unlike the classic eggplant parmesan which instead requires the eggplants to be fried or baked depending on tradition), making it even easier and quicker to prepare.
This pumpkin parmesan will please everyone, perfect to make even as a last-minute lunch or dinner. Even children will love this very tasty and sweet dish at the same time. It is also a very light recipe, therefore suitable for a diet. The pumpkin parmesan can be cooked in the oven or in the air fryer, for even faster cooking. Below you will find both cooking methods. The pumpkin will be tender and will melt in your mouth.

Ingredients
- 12 oz butternut squash (already sliced and cleaned)
- 3.5 oz provola
- 1.75 oz parmesan
- to taste salt
- to taste pepper
- to taste extra virgin olive oil

Steps
First, remove the skin: I recommend using a vegetable peeler, it will be very easy this way. Then slice it into approximately half-centimeter slices. They should be thin. I cut them round using the narrower part of the butternut squash and then divided them into half-moons.
Brush a little EVO oil on the bottom of a pan (I recommend this 8×6 inches pan suitable for the air fryer: rectangular pan) and start placing the pumpkin slices. Adjust with salt and pepper, then add the grated parmesan and the sliced provola. Make a total of 4 layers, and on the last one add pumpkin, salt, pepper, parmesan, and a drizzle of EVO oil. To make it even taller you can make 5 or 6 layers, as the pumpkin will shrink in thickness during cooking, in this case, you will need to increase the quantities.
Cook in the air fryer at 356°F for 25 minutes, or in the oven for 40 minutes. Divide into 4 portions and serve this delicious and cheesy pumpkin parmesan. Enjoy your meal!
Tips for you
✔ You can do the same with other types of pumpkin. I chose the butternut because for this recipe it is quicker to slice.
✔ As a pan, I recommend this 8×6 inches one suitable for the air fryer: rectangular pan
