Vegetable Rolls with Rice Paper

The vegetable rolls with rice paper are an easy, quick recipe perfect for when you have little time but don’t want to give up on something tasty. You will need very few ingredients – a zucchini and a carrot – but the result is surprisingly tasty.
The rice papers, increasingly used even in homemade recipes, are versatile and very simple to use: just a few seconds in water to soften them and make them ready to be filled. Once the rolls are rolled, you can cook them in an air fryer for a light and crispy version, or in the oven increasing the heat and time, or even in a pan with a drizzle of oil.   • 1 zucchini
  • 1 carrot

Steps

  • To prepare the vegetable rolls with rice paper, start with the vegetables: take one zucchini and one carrot and, using a peeler, remove the skin. With the same peeler, make thin strips from both the zucchini and the carrot. This method is much faster than the classic julienne or strip cut and allows you to have vegetables ready for cooking in minutes.

  • Heat a drizzle of oil in a pan and sauté the vegetable strips over medium-high heat for a few minutes. Add a pinch of salt and a bit of teriyaki sauce, which you can replace with soy sauce if you prefer. The vegetables should cook for about ten minutes in total: it’s better to keep them slightly crunchy, but you can of course adjust the cooking to your taste.

  • Prepare a large plate with room temperature water and dip a rice paper sheet for a few seconds, ensuring it is wet on both sides. There is no need to leave it soaking for too long: even if it seems a bit stiff, it will soften immediately as you work with it. Once rehydrated, place it on a slightly damp or greased surface, such as a wooden cutting board, so it won’t stick. Distribute a small amount of vegetables on the top part of the rice paper, then fold the top edge, the sides, and finally roll it into a compact roll. Now continue with the others, one by one.

  • Optionally, you can add some sesame seeds on top. For cooking, you have several options: in an air fryer at 392°F for 10-15 minutes (turning them halfway if necessary), in the oven at 410°F for about 20 minutes, or in a pan with a drizzle of oil until golden on all sides.
    Serve as is or with extra teriyaki sauce. Enjoy your meal!
