Ingredients

  • 4 slices of bread
  • 4 eggs
  • 1.75 oz provolone
  • to taste extra virgin olive oil
  • to taste salt
  • to taste pepper

Steps

  • Crack the eggs and separate the whites from the yolks. Grate the provolone with a coarse grater.

    Place the slices of bread directly in the air fryer basket. With the bottom of a glass or whatever you prefer, gently create a groove in the middle of each slice, lightly pressing down the bread. Pour just the egg white into the groove. Don’t worry if some overflows: it will settle during cooking.

  • Distribute the provolone along the edges of the slice, leaving the center free for the yolk you’ll add later. Cook in the air fryer for 5 minutes at 392°F.
    Take out the basket, gently add the yolk to the center of each toast (be careful not to break it—but if it happens, don’t worry: it happened to me too and they still turn out perfect!).
    Put back in the air fryer and cook for another 3 minutes at 392°F, or until the yolk is the consistency you prefer.

  • OVEN INSTRUCTIONS: Preheat the static oven to 428°F. Follow the same procedure described above. Bake on a tray with parchment paper and cook for 8 minutes for the first part (whites and cheese). Then add the yolks and continue for another 4-5 minutes, checking the cooking to keep the yolk soft.

    Once ready, add a drizzle of oil, salt, and pepper to taste. These egg toasts are perfect served hot. Try them also with a slice of avocado or smoked salmon for a richer version!

✔ You can use your favorite cheese: I chose provolone, but any cheese you like works just fine.
