The recipe for eggplant rolls in sauce is very easy to make, you just need to grill the eggplants and assemble them, and you can choose to cook them in an air fryer for a quick cooking time or in the oven, increasing the degrees and time. Ingredients
- 2 cups tomato puree
- 1 black oval eggplant
- 2 oz provola cheese
- 1 clove garlic
- 1 oz grated Parmesan cheese
- to taste extra virgin olive oil
- to taste salt

Steps
First, let’s prepare the sauce. Pour a drizzle of oil into a pan and add a whole clove of garlic. Let it brown for a minute and pour in the tomato puree. Adjust with salt and let it cook until it thickens. Finally, remove the garlic.
Wash and dry an eggplant. Cut it into long slices about half a centimeter thick and grill them in a pan for a few minutes on each side.
Take a slice of grilled eggplant, adjust with salt and spread a spoonful of sauce on top. Add a sprinkle of grated Parmesan and place a piece of provola (or another cheese of your choice) at the top. At this point, roll it up to form rolls. Repeat the steps with the other eggplant slices until you finish the ingredients.
In a baking dish, spread a ladle of sauce and place all the eggplant rolls on top, close together. Add a sprinkle of grated Parmesan on the surface to create a nice crust during cooking, and finally, a drizzle of oil.
Cook in the air fryer at 356°F for about 8-10 minutes, or in a hot oven at 374°F for about 20 minutes.
And here they are ready: serve as is or with some basil leaves. Enjoy your meal!
