Kids will love them. I saw this recipe online, it’s impossible not to have seen it by now: French Toast Roll Ups have gone viral on social media because they are tasty and irresistible. So it was impossible for me not to offer you this recipe!

Inexplicably, they are not made with brioche bread or pain perdu, as one might easily guess from the name French toast, but instead with sandwich bread, the crustless kind. Last summer, I published the recipe for savory French toast with ricotta and cherry tomatoes, to be served with a refreshing and fragrant gin tonic. Then, during the holidays, I proposed the Christmas French toast recipe with panettone and cherries: the perfect breakfast for the whole family. Finally, I prepared the sweet breakfast with brioche, yogurt, and ginger. All three recipes were made with brioche. The recipe is found below along with the others just mentioned.

Ingredients for 8 French Toast Roll Ups:

  • 8 slices sandwich bread
  • 1/3 cup pistachio cream (by Fabbri 1905)
  • 1 1/3 tbsp fruit topping (or pistachio by Fabbri 1905 as in my case)
  • 1 egg
  • 1 1/3 tbsp milk
  • 1/4 cup sugar
  • 2 tbsp butter
  • 1 pinch salt

  • 1 Cutting board
  • 1 Silicone rolling pin
  • 1 Skillet
  • 2 Plates
  • 1 Small bowl
  • 1 Knife
  • 1 Spatula
  • 1 Fork

Steps for the Pistachio French Toast Roll Ups Recipe

  • We start the preparation of the Pistachio French Toast Roll Ups by laying out the slices of sandwich bread on a cutting board. Take the silicone rolling pin and thin out each slice well on both sides to ensure they don’t puff up during the entire preparation.

    Take a small bowl and break the egg inside, add the milk and a pinch of salt. Beat with a fork to combine the ingredients. Then place the sugar in a small plate, placing everything on the work surface near you.

    Cut two squares from each rectangle of bread. Spread the pistachio spread on each square. Roll trying to close well and not to make the rolls too thick. Then pass each roll in the beaten egg and then in the sugar, placing them on a plate. Proceed this way with all the French rolls.

  • Now that all the French Toast Roll Ups are ready, we can proceed with skillet cooking. Take a 9.5 or 10-inch skillet with a non-stick bottom. Place the portion of butter inside and turn on the stovetop to low heat.

    Place four or five rolls in the skillet and let them cook for a maximum of one minute per side. Be sure to turn them often so that they don’t brown on one side and stay soggy on the others. Turn them gently with a spatula or fork without piercing them, otherwise, the filling might ooze out when heated.

Recipe Tips and Variations:

I recommend not spreading too much pistachio cream on the bread base as it might leak out during rolling and cooking of the roll ups. When dipping the rolls in the beaten egg with milk, do not leave them soaking for too long: you risk them becoming soggy and falling apart during cooking. Try to avoid sugar clumps when rolling the rolls in the bowl.

Variations of the French Toast Roll Ups Recipe: you can change the spread, choosing the classic timeless chocolate spread. I recommend trying the Fabbri 1905 salted caramel chocolate spread, which I adore! You can replace the sugar with unsweetened cocoa powder. However, remember not to roll the rolls in sugar after dipping them in egg and milk, but cook them directly in the skillet with melted butter and then let them cool for a few minutes before sprinkling with cocoa. You can also change the topping to decorate the French Roll Ups, from classic chocolate topping or, if you’re super indulgent, with maple syrup! In the second case, I recommend not rolling the rolls in sugar.
