The chicken thighs with potatoes are a tasty and easy-to-make complete main dish. They are prepared in 10 minutes (just enough time to peel and cut the potatoes) and the cooking is very simple. In fact, we can cook them in the oven or, as we will see in this recipe, also in the air fryer: this way the cooking will be much faster and you will get even more juicy chicken thighs inside and crispy outside. This is thanks to the air that circulates much faster and stronger than in the oven, allowing the thighs to cook sooner while preserving the internal juices of the meat. Alternatively, you can always cook them in the oven by increasing the degrees and times (which are written in the recipe below).
The chicken thighs with potatoes recipe is also a lunch/dinner saver because it requires very few ingredients and no major preparations in the kitchen. So it is a tasty, easy to prepare, and quick dish.

Ingredients
- 4 chicken thighs
- 200 g potatoes
- 1 tablespoon rosemary
- 1 tablespoon thyme
- 1 tablespoon oregano
- 1 tablespoon hot paprika
- 1 teaspoon salt
- to taste extra virgin olive oil
Tools
- Air Fryer
Steps
To prepare the chicken thighs with potatoes, first deal with the potatoes. Peel them, wash them, and dry them well with kitchen paper. Cut them into wedges and set aside. Place the chicken thighs directly in the air fryer (or in a baking tray for oven cooking) and add the potatoes. Add the spices: rosemary, thyme, oregano, and paprika (but you can choose the ones you prefer, even a roast mix). Add the salt and a drizzle of extra virgin olive oil. Mix and stir the aromas well with the potatoes and chicken.
Cook in air fryer at 374°F for 30-35 minutes, turning them halfway through. Or in the oven at 392°F for about 45-50 minutes.
Serve and enjoy. Bon appétit!
Tips for you
✔ For this recipe, it is necessary to cook the chicken thighs with potatoes directly in the air fryer basket without parchment paper: this way they will cook thanks to the air that passes 360 degrees from below to above, allowing for ideal air frying. This way the fat from the chicken thighs will drip down through the holes, resulting in even more succulent and tender meat, while remaining crispy on the outside.
✔ I recommend using the BBQ mesh to be inserted directly in the non-stick basket of your air fryer: the mesh protects the non-stick coating of the basket (which will remain like new) and allows food to cook evenly, letting the air pass 360 degrees. You can find it on Amazon by clicking here.
✔ Alternatively, you can use perforated parchment paper, which allows the air to pass from below to above. You can find it on Amazon by clicking here: link.
✔ For this recipe, I used the air fryer COSORI 4.7 which you can find on Amazon clicking here.
