Ham and Mozzarella Bomboloni Without Dough

The bomboloni filled with ham and mozzarella are a quick, super easy dish and require no dough: in fact, in this case, they will be even simpler! They are made in 10 minutes and are perfect as a quick dinner or lunch saver, or even as a fridge-cleaning recipe. You can also use a different filling, maybe some leftover deli meats in the fridge or grilled or pre-cooked vegetables, or even salmon. In short, the choice is really wide; in this case, I opted for a classic filling: ham and mozzarella.

To make them, you’ll need only 3 ingredients plus oil and sesame seeds which, of course, are optional. Alternatively, if you like seeds, others such as chia seeds are also fine.

You can cook the bomboloni in an air fryer, for a very quick cook, or in a hot oven. Below you will find both cooking methods!

Ingredients

  • 1 roll focaccia dough
  • 1.8 oz cooked ham
  • 1 mozzarella
  • to taste extra virgin olive oil
  • to taste sesame seeds

  • Air Fryer

Steps

  • Open a roll of focaccia dough and divide it into squares of your preferred size; I got about 16 pieces. Fill each square with a piece of cooked ham and well-drained mozzarella. Close well, giving it a ball shape. Proceed with the rest of the ingredients to form all the bomboloni. Add a spray of EVO oil and sprinkle some sesame seeds on top as desired.

  • COOKING IN AIR FRYER:
    Preheat the air fryer for 3 minutes at 356°F. Place the bomboloni directly in the basket and cook at 356°F for 15 minutes, turning them halfway.

    COOKING IN OVEN:
    Preheat the oven to 374°F. Place the bomboloni on a baking tray lined with parchment paper and bake at 374°F for about 20-25 minutes or until they are well browned.

    Serve hot or at room temperature. Enjoy your meal!

Tips for You

✔ The spray oil I used can be found in supermarkets. I recommend one of these because their spray is really nebulizing and controlled, and they are really great. You can find some by clicking here. Alternatively, you can purchase the spray bottle that you can fill yourself with the oil of your choice. I’ll leave you a link to a great nebulizer here.

✔ I recommend using the BBQ mesh that you can place directly in the non-stick basket of your air fryer: the mesh protects the non-stick coating of the basket (which will remain like new) and allows the food to cook evenly, allowing air to flow at 360 degrees.
