Quick Pain au Chocolat Without Dough

The pain au chocolat are delicious French pastries made with puff pastry and have a flaky texture with a chocolate center. In this case, let’s see how to make even easier and faster pain au chocolat: you will need very few ingredients and no need to prepare any dough!

These pastries are so good that you will fall in love with them. Once you’ve tried this simple version, you’ll make it always! They are very quick to prepare, we just need to create rectangles of dough, fill them, and roll them from both sides: and you’re done! The pain au chocolat are covered with chocolate on the surface; in this case, we will decorate them with a lighter cream made only with unsweetened cocoa and milk/plant-based milk, and pistachio crumbs… in short, a real delight!

Ingredients

  • 1 roll rectangular puff pastry
  • 1 egg yolk
  • as needed chocolate chips
  • as needed maple syrup
  • as needed crushed pistachios
  • 3 tbsp unsweetened cocoa powder
  • 3 tbsp milk or plant-based milk
  • as needed sweetener of choice (optional)

Steps

  • Unroll a sheet of rectangular puff pastry. Divide it into 5 parts by cutting along the shorter side with a knife or a wheel cutter. Fold the strips in half.

    Sprinkle each strip with a handful of chocolate chips. Roll one side and then the other so they meet, and turn them upside down.

  • Brush the surface of the pain au chocolat with an egg yolk.

    Bake in the air fryer at 338°F for 17 minutes, turning them halfway through cooking. Alternatively, bake them in a hot oven at 356°F for about 25-30 minutes.

    Let them cool for half an hour. Meanwhile, prepare a light and delicious cream: simply mix the unsweetened cocoa with milk or, as in my case, plant-based milk. Mix quickly until a cream forms; adjust with a few more drops if too thick or more unsweetened cocoa if too liquid. You can sweeten it to taste.

  • Brush the pain au chocolat with maple syrup: they will be shinier and more delicious. Decorate with cocoa cream and pistachio crumbs.

    Serve at room temperature or warm. Enjoy!

Tips for You

✔ Instead of the cocoa cream, any other chocolate cream or hazelnut spreadable cream will work just fine.

✔ The pistachio crumbs are optional, but I personally recommend them as they are fantastic.

✔ For this recipe, it is necessary to cook the pain au chocolat directly in the basket of the air fryer without trays or parchment paper: this way they will cook thanks to the air that circulates 360 degrees from below and above, allowing for ideal air frying. Trays or parchment paper would hinder this process by blocking the circulating air inside the air fryer.

✔ I recommend using the BBQ grill mesh to insert directly into the non-stick basket of your air fryer: the mesh protects the non-stick coating of the basket (which will remain like new) and allows the food to cook evenly, with air circulating 360 degrees. Find it on Amazon by clicking here.
