Ingredients

  • 14 oz new potatoes
  • 4 artichokes
  • 1 oz grated Parmesan cheese
  • 1.8 oz breadcrumbs
  • 3 sprigs rosemary
  • 1 bunch parsley
  • 1 lemon
  • 3 cloves garlic
  • to taste salt
  • to taste pepper
  • to taste extra virgin olive oil

Steps

  • First, we clean the artichokes by removing the outer leaves; we cut the stem (you can keep it by trimming it to keep the tender inner part) and divide them into 4 parts. We remove the internal choke, then cut them again in half and immediately transfer them to a bowl with cold water and a sliced lemon.

  • Now we take care of the potatoes: I used new potatoes, so I didn’t peel them, just washed them thoroughly, but if you want, you can use regular potatoes and peel them. We wash them, dry them well, and cut them into wedges in a bowl. We add a drizzle of extra virgin olive oil and mix.

  • COOKING IN AIR FRYER:
    We transfer the potatoes into the air fryer and cook them at 375°F for 10 minutes. Meanwhile, rinse the artichokes and prepare the rest of the ingredients. Once the time has passed, open the basket and add the artichokes, grated Parmesan, breadcrumbs, salt, pepper, rosemary, chopped parsley, garlic cloves and a drizzle of extra virgin olive oil. Mix and continue cooking for 10-12 minutes.

    COOKING IN FAN-ASSISTED OVEN:
    For oven cooking, transfer the potatoes to a baking sheet and bake at 375°F for 15 minutes. Once the time has passed, add the previously drained and rinsed artichokes, grated Parmesan, breadcrumbs, salt, pepper, rosemary, chopped parsley, garlic cloves, and a drizzle of extra virgin olive oil; mix and continue cooking at 375°F for 15-20 minutes.

    COOKING IN A PAN:
    We can also cook artichokes and potatoes in a pan over moderate heat: in this case, put the potatoes and artichokes together and start cooking with a generous drizzle of extra virgin olive oil. After a few minutes, add a glass of water and continue cooking with the lid on. After another 10 minutes, add the other ingredients: grated Parmesan, breadcrumbs, salt, pepper, rosemary, chopped parsley, garlic cloves, and continue cooking with the lid on. If needed, add more water. The total cooking time will be 30-35 minutes.

    Once ready, serve the artichokes and potatoes and enjoy. Bon appétit!
