Creamy Stuffed Potatoes in Air Fryer

The creamy stuffed potatoes are a quick, tasty, and easy second course to make. To make them, simply boil the potatoes, extract the pulp and combine it with ham, cheese, Parmesan, and yogurt (or a creamy cheese), then fill the potatoes and cook them: a piece of cake!

The recipe for creamy stuffed potatoes is delicious: they are stringy and soft, they literally melt in your mouth. Plus, they take just a few minutes to prepare—we just have to wait for the potatoes to boil. To cook them, we can use the air fryer (for quick cooking) or the oven. Below you will find both cooking methods.

Ingredients

  • 2 large potatoes
  • 1.4 oz cooked ham
  • 3.5 oz provola cheese
  • 3.5 oz Greek yogurt (or a creamy cheese)
  • 2 tbsps grated Parmesan cheese
  • to taste salt
  • to taste extra virgin olive oil
  • to taste fresh basil

Steps

  • Boil the potatoes in boiling water until soft. Be careful not to break them: to know if they are ready, stick in a fork and if it goes in easily, drain them and let them cool for about half an hour.

    Take the potatoes, cut them in half, and scoop out the inner pulp with a spoon, leaving at least 0.4 inches from the edges (we don’t want to break them).

  • Set the potato “boats” aside, while transferring the pulp into a bowl and adding the cooked ham (in pieces), provola, grated Parmesan, salt, and Greek yogurt: you can replace this ingredient with a creamy cheese (see tips below ⬇️). Mix well, take the empty potatoes, and fill them with this mixture.

  • Sprinkle grated Parmesan on top and a drizzle of extra virgin olive oil. Cook them in the air fryer at 392°F for 15 minutes or in a preheated convection oven for 30 minutes.
