Ingredients

  • 4 slices sandwich bread
  • 1.75 oz melty cheese (or other of choice)
  • 1 egg
  • to taste tomato paste
  • to taste sugar-free cornflakes
  • to taste breadcrumbs
  • to taste salt
  • to taste extra virgin olive oil

Steps

  • First, take the slices of bread and flatten them slightly with a rolling pin. Cut out discs using a round cutter or a large mug, but if you prefer, you can leave them as is, in a square shape. Spread tomato paste on each slice of bread, leaving the edges free, just a teaspoon is enough, then add cheese slices (I used 4 small ones for each medallion).

    Close with another bread disc (which will already have the tomato paste) and seal the edges by pinching them with your fingers.

  • In a plate, beat an egg and add a pinch of salt. In another, pour the breadcrumbs and mix in the cornflakes crushed with your fingers (make sure they are sugar-free).

    Dip the medallions first in the egg and then in the breadcrumbs, making sure it sticks well, also on the edges.

  • Transfer them to the air fryer basket, spray some drops of extra virgin olive oil on the surface and cook at 392°F for 10 minutes; turn them halfway, add another spray of olive oil, and finish cooking for the remaining minutes.

    ALTERNATIVE COOKING (OVEN – PAN):

    You can bake the medallions in a hot oven at 410°F for 20 minutes with a spray of olive oil or cook them in a pan with hot oil until golden, turning them halfway through.

Tips for You

✔ For this recipe, it is necessary to cook the bread medallions directly in the basket of the air fryer without baking trays or parchment paper: this way they will cook thanks to the air circulating 360 degrees, allowing for ideal air frying. Baking trays or parchment paper would obstruct the circulating air inside the air fryer.

✔ The oil sprayer I used is available in supermarkets. I recommend one because its spray is truly misting and controlled, plus it’s really excellent. You can find some by clicking here.
