Ingredients

  • 1.1 lbs potatoes
  • 1 drizzle extra virgin olive oil
  • to taste salt
  • to taste breadcrumbs
  • 3.5 oz tomato puree
  • 4.2 oz melting cheese (or other cheese of choice)

Steps

  • Peel the potatoes and place them in a pot with plenty of water; let them cook for about half an hour or until softened. Once ready, drain them well (make sure) and let them cool slightly.

    Mash the potatoes in a bowl using a potato masher or a fork. Add a pinch of salt and a drizzle of EVO oil, then mix well to obtain a homogeneous mixture. No need to add eggs or other ingredients.

  • Prepare the sauce: in a bowl, mix the tomato puree with a drizzle of EVO oil and a pinch of salt. If you like, you can also add oregano.

  • Take some molds or baking cups; I used aluminum ones about 2 inches. Pour a drizzle of EVO oil over the entire internal surface and coat with breadcrumbs, so the cakes won’t stick. Place a spoonful of potatoes at the bottom of each mold; add a teaspoon of tomato sauce and some cubes of cheese in the center, then top with another spoonful of potatoes, smoothing the surface well.

  • Transfer the pizza-style potato cakes to the basket of the air fryer, sprinkle breadcrumbs on top, and cook at 356°F for 15 minutes or in a hot oven at 392°F for 30 minutes.

    Spread the remaining tomato sauce (you can warm it up first if you want) on the plate, making 4 circles to place the cakes on. Turn the cakes over onto the sauce, add a teaspoon of tomato sauce, and serve. Inside, they will be melty and soft. Enjoy your meal!
