Ingredients for 4 servings of Potato, Smoked Cheese, and Baked Ham Towers

  • 3 potatoes (medium-large)
  • 5.3 oz ham
  • 5.3 oz smoked cheese
  • sprigs rosemary
  • to taste cheese (grated of your choice)
  • 1 pinch salt
  • 1 pinch pepper
  • to taste extra virgin olive oil

Optional the use of a clove of garlic to flavor the baked potato towers with smoked cheese and ham.

If you have time to prepare this recipe, you can make the potato slices even crispier by simply placing them in a bowl with cold water and a pinch of salt for at least ten minutes, so they lose starch becoming consequently crunchier to the bite after baking.

Tools to prepare the Potato, Smoked Cheese, and Ham Towers

  • 1 Mandoline
  • 1 Bowl

  • 1 Knife
  • 1 Cutting board

For a buffet appetizer or starter, prepare two towers per person. If this recipe is part of your starters for lunch or dinner, you can prepare one tower per person so as not to weigh down the meal.

Steps for the Potato, Smoked Cheese, and Ham Oven Towers Recipe

  • We start this recipe by washing and patting dry the potatoes. We remove the skin using a potato peeler. With a mandoline, or a knife, we slice the potatoes aiming for slices about 1/8 inch thick.

    Pour the potato slices into a bowl and season with extra virgin olive oil, salt, and pepper. Add the rosemary leaves and, if desired, a clove of garlic. Preheat the oven to 428 degrees F with static mode and let it heat.

    Place a parchment paper sheet in each baking tray, arrange the potato slices spaced apart, add a drizzle of oil and some rosemary leaves. Bake and cook for about 25 minutes. The surface of the potatoes should become beautifully golden.

    Meanwhile, slice the smoked cheese into slices about 1/8 inch thick, like the potatoes. Also, tear the ham into pieces. Keep both of these ingredients aside.

  • Once the potatoes are ready, we can remove them from the oven and let them cool on the kitchen counter for a few minutes. Now we can create the potato and cheese towers. Leave a sheet of parchment paper in a baking tray that we will use for the second phase of the potato baking.

    Place a potato slice with a piece of ham on top, then another potato and then a slice of cheese, then again potato, ham, and cheese, followed by a potato cap that we set aside from the cutting and baked along with the other slices in the tray.

    Sprinkle with some grated cheese and bake the potato and ham towers for about 4-5 minutes. The oven should be at the same temperature as the first baking, namely 428 degrees F with static mode. This will allow the smoked cheese and cheese to melt and create a golden crust on the surface. Serve the potato and cheese towers hot and gooey, irresistible!

Tips and variations:

As the main tip, I would say you should try to cut the potatoes to the same thickness. For this reason, I mentioned in the list of essential tools for this recipe, the mandoline. By choosing the thickness, you will achieve all slices of equal thickness, something that is difficult to achieve with a knife. This will ensure even cooking of the potatoes, perfect for creating the potato towers with cheese and ham. Main variations can include: using a clove of garlic, as already mentioned in the recipe text. You can also vary the type of cold cut, choosing prosciutto or salami. However, I would avoid sausage. Being an appetizer or aperitif, sausage could make it too heavy.

You can also change the cheese. If you don’t like smoked cheese, you can use another soft cheese that easily melts in a few minutes, like galbanino, toma, or emmental.
