No-rise Flatbreads with Mushrooms in Air Fryer

The no-rise flatbreads with mushrooms are perfect as a quick dinner or lunch at the last minute; they are prepared in a few minutes and are extremely easy to make. In this case, we see flatbreads filled with mushrooms and cheese, but you can choose the filling you prefer. The no-rise flatbreads with mushrooms can be cooked in an air fryer for super-fast cooking, or in a hot oven by increasing temperature and cooking times.

To make the no-rise flatbreads, we need a few ingredients: for the dough, we need flour, Greek yogurt, and instant yeast. For the filling, I chose champignon mushrooms and cheese, but a simple pizza-style filling with tomato sauce and mozzarella is also great!

Ingredients

  • 1 3/4 cups all-purpose flour or 0 flour
  • 2/3 cup Greek yogurt
  • 1 teaspoon instant yeast for savory preparations
  • 1 tablespoon extra virgin olive oil
  • 1 teaspoon salt
  • 7 oz champignon mushrooms
  • 8 3/4 oz provola (or other cheese of choice)
  • 1 bunch parsley
  • 1 clove garlic
  • to taste salt

Steps

  • First, let’s prepare the mushrooms: clean them well and slice them. Chop the parsley finely with a knife. In a pan, pour a drizzle of extra virgin olive oil and sauté a clove of garlic; when golden, add the mushrooms, parsley, and a pinch of salt, cooking for about ten minutes, stirring occasionally. Once ready, remove them from the pan, discard the garlic, and let them cool.

  • Prepare the no-rise dough: in a bowl, combine the flour, Greek yogurt, salt, instant yeast, and extra virgin olive oil; mix first in the bowl with a spoon, then with your hands.

  • Transfer it to the table and knead the dough for a few minutes until smooth and firm. Divide it into 4 parts, form balls, and roll them out with a rolling pin to make discs. Meanwhile, slice the cheese (provola or your preferred choice).

  • Prepare the flatbreads: top one disc with the mushrooms and cheese slices, leaving a few inches free from the edges; place another disc on top and seal the edges well. I made simple decorations by pinching the dough with my thumb and index finger, forming waves.

  • Cook the flatbreads in the air fryer at 356°F for 10 minutes, flipping halfway through, or in a hot oven at 392°F for 20 minutes.

    Serve and enjoy: they are delicious and cheesy! Bon appétit.

Tips for you

✔ As these are no-rise flatbreads, instant yeast is required, but if you wish, you can use fresh yeast (10 g fresh or 4 g dry) and let the dough rise until doubled (about 2-3 hours, depending on the temperature).

✔ You can choose the filling you like best. Here are some ideas: tomato sauce and mozzarella, ham and cheese, zucchini and stracchino, eggplant and cheese.

✔ As you have seen, you don’t need to use parchment paper to cook the flatbreads in the air fryer, but just place them directly in the perforated basket: this way, the air passes freely through the holes, and cooking will be faster and more even. However, you must flip the flatbreads halfway through to brown the underside well.

✔ Alternatively, they can be baked in a hot oven by increasing temperature and time (you can find the indications above in the recipe).
