The pocket pizzas are ready in just a few minutes and are no-rise, making them even faster and easier to make. To prepare the pocket pizzas, we just need to make a simple flatbread dough with flour, Greek yogurt, instant yeast, salt, and EVO oil; below you find also the alternative to Greek yogurt. No rising needed, just a 10-minute rest: now we just need to roll out the flatbreads with a rolling pin and cook them in the air fryer, adding a tasty topping with tomato sauce and mozzarella. They will be super gooey inside and golden and crispy outside.

Ingredients
- 1 1/3 cups all-purpose flour
- 1/2 cup Greek yogurt
- 1 tbsp extra virgin olive oil
- 1 tsp instant yeast for savory preparations
- 1 tsp salt (level)

- 10 1/2 oz mozzarella (or other cheese)
- 5 1/4 oz tomato sauce

Steps
In a bowl, combine the all-purpose flour with the Greek yogurt*, salt, instant yeast, and EVO oil; knead with your hands for a few minutes first inside the bowl and then on the work surface until you get a smooth and homogeneous dough. Let it rest for about ten minutes.
*as an alternative to Greek yogurt, you can use 140 ml of water.
Meanwhile, prepare a tomato sauce by mixing the tomato sauce with a pinch of salt and a drizzle of EVO oil.
Take the dough again and divide it into 3, creating small round dough balls. Roll them out with a rolling pin to get thin flatbreads.
AIR FRYER
Transfer the flatbread to the air fryer basket, add a spray of oil on both sides, and cook at 356°F for 5 minutes; open the air fryer, flip the flatbread, and top with tomato sauce and mozzarella, then continue cooking at 356°F for another 3-4 minutes.SKILLET
Heat a drizzle of oil and cook the flatbread for a few minutes over low heat; flip, continue cooking, and add tomato sauce and mozzarella. Cover with the lid and cook for a few more minutes over low heat.OVEN
Transfer the flatbread to a baking sheet lined with parchment paper and add a drizzle of oil; bake in a preheated oven at 392°F for 10 minutes, flip the flatbread, and top with tomato sauce and mozzarella, then continue baking for another 6-8 minutes.Once ready, just fold them in half and enjoy. Tips for you
✔ You can replace Greek yogurt with 100 ml of water.
✔ They can be filled as you like, or you can make simple flatbreads to top raw at a later time.
✔ As you saw, no need to use parchment paper, just place them directly in the perforated basket: this way, air passes freely through the holes, and cooking will be faster and more even. However, you must necessarily flip the focaccias halfway through cooking to brown the bottom side well.
✔ Alternatively, they can be baked in a hot oven by increasing temperature and time or in a skillet. You can find all the instructions above in the recipe.
