Fried mozzarella bites are a classic: tasty, moreish, and always a hit with everyone. They are generally found in appetizers or at aperitifs, and are so delicious that they can’t be missed. They are usually fried in hot oil, and in this recipe, I explain how to make them perfectly using an air fryer.
Many write to me saying that fried mozzarella bites in an air fryer open during cooking, but I assure you it’s truly easy to make them perfect. With my tips, you’ll get perfect fried mozzarella bites that won’t open during cooking and will be super crispy on the outside. It will be enough to follow some small tricks to get really super fried mozzarella bites.
Let me tell you that the recipe is so easy and quick that you’ll make it all the time. Additionally, avoiding traditional frying will also be safer for us, without the risk of getting burned by hot oil. As you’ll see, you’ll only need a few ingredients to make them.

Ingredients
- 10 mozzarella balls
- 2 eggs
- as needed breadcrumbs
- as needed all-purpose flour
- as needed extra virgin olive oil
- as needed salt
- as needed pepper

Steps
First, dry the mozzarella balls very well, one by one, using kitchen paper. We need to make sure the mozzarella balls are well dried.
Prepare everything you need. In one plate, place the flour, in another, beat two eggs, and in another bowl, pour the breadcrumbs to which you add a pinch of salt and a dash of pepper.
Proceed with the breading. First, pass the mozzarella balls through the flour and then the eggs, using a spoon. Then coat them with the breadcrumbs, trying to make them adhere well; I recommend shaking the mozzarella balls in the breadcrumbs bowl, in this way it will stick better without risking to ruin them by removing some breading by touching them with your hands.
Now do a second breading: dip them again first in the eggs and then in the breadcrumbs. This way, the breading will be thicker and the mozzarella balls better protected.
At this point, transfer them to the freezer for about 45 minutes: this will be necessary to prevent them from opening during cooking. You can keep them even longer if you want, but 45 minutes is fine as a time.
After this time, transfer them to the basket of the air fryer, add a spray of extra virgin olive oil, and cook them at 400°F for about 7 minutes, shaking the basket halfway through cooking.
They will be golden and crispy on the outside, and soft and cheesy inside. But above all, they will be perfect and won’t open. Bon appétit!
Tips for You
✔ To get perfect mozzarella bites, just follow the steps outlined above in the recipe. In fact, these tricks will be essential:
1) Dry them very WELL with kitchen paper
2) Do the double breading
3) Leave them in the freezer for at least 45 minutes or more
✔ For this recipe, it is necessary to cook the mozzarella bites directly in the basket of the air fryer without trays or parchment paper: this way they will cook thanks to the air that circulates 360 degrees from below to above, allowing for ideal air frying. Trays or parchment paper in this case would be an obstacle as they would block the air circulating inside the air fryer.
