  • If you don’t have béchamel at home, here is how to make it easily and without butter: in a saucepan, heat the milk (or soy drink if you prefer) almost to boiling, then turn off the heat. In another high-sided saucepan, heat the sunflower oil over low heat for a minute; gradually add the flour while stirring quickly with a whisk. If you notice that the consistency is becoming too thick, do not add more flour; if it’s still very liquid, add a little more flour. Continue stirring and pour in the hot milk. Salt to taste and add a pinch of nutmeg; turn off the heat when the right consistency is reached.

  • In a baking pan suitable for your air fryer (I used this: 8×8 inches), spread a ladle of béchamel, place a sheet of lasagna, more béchamel, salmon, grated Parmesan, and provola. Make a total of 5 layers, and on the last one, put béchamel, salmon, Parmesan, and crushed pistachios.

  • At this point (IMPORTANT), place a sheet of parchment paper on top and seal well with aluminum foil. This way, it will cook well inside without burning on top. Cook in the air fryer at 375°F for 20 minutes, removing the cover in the last 5 minutes to brown the surface. Alternatively, you can bake them in a preheated oven at 400°F for about 35-40 minutes.

Plate the salmon and provola lasagna and enjoy. Bon appétit!

Tips for you

✔ You can also bake the lasagna with mushrooms and brie in a preheated oven by increasing the temperature and cooking times (see recipe above for instructions). In this case, you can also double the quantities and use a larger pan for 8 servings.

✔ You can use dry lasagna instead of fresh ones without changing the temperature and cooking times.

✔ I used a non-stick pan with dimensions of 8×8 inches for this recipe. If you don’t have one, you can find it on Amazon by clicking here.

✔ Be sure to use parchment paper and aluminum foil during cooking: this will ensure the cannelloni cook well inside. Remove it only when there are 4 minutes left to finish, so it doesn’t burn and remains creamy, allowing you to add crushed pistachios on top.

✔ Lasagna with mushrooms and brie can be stored in the refrigerator for up to 2 days. If you don’t have time to cook them, you can freeze them and cook them later. In this case, I recommend taking them out of the freezer for at least 2 hours and then proceed with cooking as indicated above, increasing by a few minutes.

✔ For this recipe, I used the COSORI 4.7 Air Fryer which you can find on Amazon here.

FAQ (Questions and Answers)

  • Why do you also use parchment paper?

Parchment paper is used with aluminum foil to prevent the lasagna from being in direct contact with the foil. In fact, even without parchment paper, nothing happens if the lasagna is covered directly by the foil, but this way let’s say it is “safer for everyone”.

  • Is aluminum foil harmful??

More than a question, it is often posed to me as a “statement”. In any case, the answer is no: it is not harmful. In fact, the aluminum foil sold in supermarkets is for food use and can create problems ONLY at extreme temperatures. Remember that, basically, foil is also used in ovens, and these can reach very high temperatures like 500°F, unlike the air fryer which at most can reach 400°F (and in some air fryers 450°F, which are rare), and still even with the maximum oven temperature, you don’t have problems. So rest assured! In any case, as you have seen, I inserted parchment paper between the lasagna and foil so that everyone is more at ease.
