Gratinated cod is a very tasty, crunchy, and easy to make fish main course. You only need a few ingredients to combine for the gratin and some defrosted cod fillets. Cod fillets prepared this way are super crunchy, flavorful, and everyone at the table will love them. Just defrost the fillets the day before, prepare a simple gratin, season and cook.
For cooking gratinated cod fillets, we can use the air fryer or the oven by increasing temperature and time. In the recipe, you’ll find both cooking methods so you can prepare the fillets as you prefer. In any case, they will be delicious, and once you try them this way, you’ll make them much more often.

- Difficulty: Easy
- Cost: Affordable
- Preparation time: 10 Minutes
- Portions: 4
- Cooking methods: Air Frying
- Cuisine: Italian
Ingredients
- 4 cod fillets
- 1 1/4 cups breadcrumbs
- Half tablespoon extra virgin olive oil
- 2 tablespoons white wine
- 1 lemon (organic)
- 1 bunch parsley
- to taste salt
- to taste extra virgin olive oil
Tools
- Air Fryer
Steps
First, defrost the cod fillets in the refrigerator the day before. When they are soft, dab them with a paper towel to remove any excess water.
Prepare the gratin: in a bowl, pour the breadcrumbs (if possible, coarse-grained, I used this: link) and add the chopped parsley, a pinch of salt, EVO oil, and white wine, then mix well.
Brush a few drops of EVO oil on the surface of the fillets and spread a few tablespoons of coating on top, covering them completely.
Transfer them directly to the basket of the air fryer, add a spray of oil, and cook at 356°F for 10 minutes, or in a hot oven at 374°F for about 20 minutes.
Once ready, add the grated lemon zest (if organic) and the juice, if you like. Enjoy your meal!
Tips for You
✔ I recommend trying a product I used for this recipe and loved, which is the “crunchy gratin” breadcrumbs from Le Farine Magiche, with toasted bread and coarse grains, very flavorful and can be used even on its own to enhance other dishes. If you want to see it, you can find it clicking here (in this case, it comes in 6 pieces, but you might also find a single package).
✔ If you want, you can use perforated parchment paper to let the air flow through the holes. You can find it on Amazon by clicking here: link.
✔ I recommend using the BBQ mesh to place directly in the non-stick basket of your air fryer: the mesh protects the non-stick surface of the basket (keeping it like new) and allows the food to cook evenly, letting the air pass at 360 degrees. You can find it on Amazon by clicking here.
✔ For this recipe, I used the air fryer PHILIPS 7000 Series XXL 8.3 liters. It’s amazing, with an incredible capacity, the ability to choose fan intensity (depending on the food), and total control even from the App! You can find it by clicking here: link.
