The Cookies with Nutella and coconut flour are easy and quick to make, perfect during the summer if you don’t feel like turning on the oven. In fact, a dessert that is no-bake but requires an hour of rest in the fridge before serving this treat.
Do you remember the birthdays of the ’80s and ’90s? It was a children’s dessert that was absolutely essential, there was always a huge steel tray in the fridge ready to be served to the little guests. How many cookies with coconut flour and hazelnut cream have I eaten in my life? Have you ever wondered? I dare not count them, I love them!!!
For my birthdays they were always there, grandma always made them and we had a competition to see who could eat the most. Easy to make, you can even dedicate yourself to this recipe with your children or grandchildren, they are perfect for many occasions. A dinner with friends, a sweet to give as a gift or to keep in the fridge to enjoy in the evening as a sweet indulgence during the week. With this recipe, we will make about 30 Nutella cookies.
In the classic recipe and more well-known one, Savoiardi cookies are used, but we don’t like them much; we prefer Oro Saiwa with which I prepare Tiramisu with my recipe, or Pavesini, as in this case.

Ingredients for Cookies with Nutella and Coconut Flour
- 40 Pavesini (or similar cookies)
- to taste cream cheese (in my case lactose-free)
- to taste Nutella®
- to taste coconut flour
- 0.63 cup coffee (in my case instant already sweetened)
Keep in mind that the coffee, whether you make it with a moka pot or as instant coffee like I did, must be completely cold! Be careful, otherwise you risk breaking or softening the cookies if the coffee is still too hot. I usually prepare it in the morning just after getting up, while having breakfast, then I let it cool at room temperature.
I didn’t list sugar in the list of ingredients because my coffee was already sweetened. Don’t overdo it with sugar, I recommend a teaspoon not too full to sweeten the indicated dose of coffee.
Tools to Prepare Cookies with Coconut Flour and Hazelnut Cream

- 1 Coffee Maker
I indicated among the necessary tools for this recipe the coffee maker; obviously, if you are making American coffee as I did, you will need a kettle instead.
Recipe Steps for Cookies with Nutella and Coconut Flour
The first thing to do is to prepare the coffee and sweeten it. If you have prepared instant coffee already sweetened like mine, then sugar will not be needed! Let it cool at room temperature for at least an hour before proceeding, otherwise, as mentioned earlier, we risk crumbling the cookies during preparation.
Once the coffee is cold, place the coconut flour on a flat plate, get trays or plates where we will place the cookies as we prepare them.
Now let’s proceed with the preparation of the cookies. On the base of one cookie, spread Nutella using a knife. On the base of another cookie, spread cream cheese or mascarpone, if you prefer, with another knife. Mascarpone is too heavy for me, so I chose lactose-free cheese for this recipe.
Then take one cream cheese base and one hazelnut cream base and join them together, creating a single filled cookie. Quickly dip it in the small bowl or deep plate where you’ve poured the coffee. Then pass the cookie in the coconut flour and place it on the plate or tray that will be used for the cookies’ rest in the fridge.
Bea’s Tip: You can first prepare all the bases and then proceed with the coffee dipping and then the coconut flour, this way you won’t dirty your hands every single time and mix coffee with coconut and vice versa transfer coffee drops to the coconut.
Continue this way until all the cookies are finished, about 30 filled treats. Put the plate in the fridge and let them rest for at least an hour before serving them to your family or friends.

Storage of Cookies with Nutella, Coconut Flour, and Cream Cheese
We can store the cookies with Nutella and coconut flour in the fridge for a maximum of two or three days. Keep in mind, however, that they should not undergo temperature changes. Since it’s summer, taking them in and out of the fridge could cause the cookies to deteriorate. Therefore, keep the tray with all the sweets in the fridge and only take out the cookies you are going to enjoy. For this reason, I have only indicated the doses to prepare a maximum of 30 filled treats and no more, so you can consume them in a short time.
