Eggplant Cordon Bleu in Air Fryer

The Eggplant Cordon Bleu in Air Fryer is an easy and quick recipe to make with few ingredients and perfect if you have an eggplant to use up. They are ideal as an alternative to the classic meat cordon bleu, but most importantly they are delicious and can be prepared in a few minutes. They are crispy on the outside and soft and gooey on the inside. They can be cooked in the air fryer or oven, according to your preference: all cooking instructions are below.

Eggplant Cordon Bleu in Air Fryer

Ingredients

  • 1 black oval eggplant
  • 2 eggs
  • oz mozzarella for pizza (4 oz)
  • to taste breadcrumbs
  • to taste salt
  • to taste extra virgin olive oil

Steps

  • Wash and slice an eggplant into thin slices about half a centimeter thick. Add a pinch of salt to each slice and let them drain the excess liquid for half an hour, this way they will lose their bitterness. Wash and dry them well.

    Heat a grill or pan, then grill the eggplants with a drizzle of oil for a few minutes on each side, or you can cook them in a preheated air fryer at 350°F for 15 minutes turning them in the last minutes of cooking.

  • Then prepare what’s needed for the breading. Beat the eggs in a plate and pour the breadcrumbs into another. Separately, cut the mozzarella for pizza into slices.

    Prepare the cordon bleu: on one slice of eggplant place a pinch of salt and a slice of mozzarella, then close with another eggplant slice and another pinch of salt. Repeat for all the cordon bleu. Dip them in the beaten egg and then in the breadcrumbs, trying to seal well also the edges.

  • Transfer the cordon bleu to the air fryer basket and spray with some extra virgin olive oil. Cook at 350°F for 13 minutes, turning them in the last 5 minutes to brown the underside as well.

    Alternatively, you can bake the cordon bleu in a preheated oven at 375°F for about 25 minutes or until golden.

    Once ready, they will be super crispy on the outside and soft and gooey on the inside, so…eat them right away! Enjoy your meal.

Tips and Storage

✔ You can store them in the refrigerator already cooked, for up to 3 days. Alternatively, you can also fill them and cook them later, storing them in the refrigerator for 2 or 3 days, or in the freezer in an airtight container for up to 1 month.

✔ I recommend using a BBQ mesh to insert directly into the non-stick basket of your air fryer: the mesh protects the non-stick surface of the basket (which will stay like new) and allows the food to cook evenly, allowing air to pass through at 360 degrees.
