The air fryer chiacchiere are light, tasty, and very easy to make. Following my tricks they will be perfect even with this cooking method. To make them, you will need a few ingredients: flour, one egg, sugar, liqueur (strega, grappa, or whatever you prefer), baking powder, and orange zest: they will be even more fragrant, but if you wish, you can omit it.
The dough is really very simple. You can roll it out by hand with a rolling pin or with the pasta machine: in this case, I recommend a very thin thickness, 1 or at most 2 if you prefer them thicker.
As an alternative to the air fryer, below you will find all the instructions to make them in the oven or in a pan with the classic frying. Remember that in the oven or in the air fryer they will never be identical to fried ones, lacking the classic greasy taste, I’m not here to tell you things that aren’t true. But they will certainly be very delicious, crunchy, and much lighter.

Ingredients
- 1 1/4 cups all-purpose flour
- 1 egg
- 1 tbsp sugar
- 1 tbsp sunflower oil
- 2 tbsps liqueur (strega, grappa, other)
- 1 organic orange (zest)
- 1 pinch salt
- to taste extra virgin olive oil
- to taste powdered sugar
- juice of 1 orange

Steps
In a bowl, pour the flour and make the classic well in the center. Add one egg, the sugar, the baking powder, a pinch of salt, the sunflower oil, the liqueur, and the grated orange zest (optional). Work with the fork from the center towards the outside, then proceed to knead with your hands first inside the bowl and then on a work surface; knead the dough well for a few minutes until obtaining a smooth and homogeneous ball. Cover it with plastic wrap and let it rest for 30 minutes at room temperature.
Flour the work surface, take back the dough ball and divide it into two by making balls. Roll them out roughly with the rolling pin, then thin them in the pasta machine twice; the dough will still be fragile, this is normal: just fold them a few times and then pass them through the machine several times; they should be very thin, so use the thickness level at 1 or 2 at most if you like them thicker. Alternatively, you can roll them out by hand with the rolling pin, always very thin.
At this point, form rectangles and cut the center with two cuts. Roll out the leftover dough again to obtain more chiacchiere. Place them on a baking tray with parchment paper and transfer them to the refrigerator for at least 30 minutes: this step is crucial to create a thermal shock during cooking and get the classic bubbles.
Preheat the air fryer for 3 minutes at 392°F (200°C): this is also necessary, this way the air fryer will already be hot and a thermal shock will occur. Spray the basket with a touch of oil; place the chiacchiere inside, spray them with a few drops of oil (or brush it) and cook at 392°F (200°C) for about 5-6 minutes. They will have bubbles underneath, while on top, it is possible that fewer bubbles will appear. Decorate the top with powdered sugar. Enjoy!
ALTERNATIVE COOKING METHODS:
– In a hot oven at 375°F (190°C) for about 10 minutes.
– Fried: use a pan with plenty of sunflower oil and cook until golden a few minutes per side.
Tips for you
✔ It is necessary to preheat the air fryer, it should be hot at the time of cooking.
✔ The chiacchiere should be kept in the refrigerator for at least 30 minutes: this way a thermal shock will be created, allowing us to obtain perfect chiacchiere with bubbles (especially underneath).
✔ Of course, they will NEVER be identical to fried ones, let’s be clear. They don’t have the classic grease of frying, but they are a tasty, light, and quick alternative.
✔ I recommend using the BBQ net to insert directly into the non-stick basket of your air fryer: the net protects the non-stick coating of the basket (which will remain as new) and allows food to cook evenly, letting air pass through 360 degrees. You can find it on Amazon by clicking here.
