Lamb with Potatoes in Air Fryer

A typical dish in our kitchens is certainly lamb with potatoes: delicious, flavorful, and perfect for any occasion, from Christmas to Easter, but also for Sunday lunches or dinners with family. The recipe for lamb with potatoes is really easy to make; as you will see, it can be prepared in a few steps and in a short time you will have a special dish with a unique taste. In this version, we’ll see how to cook it to perfection in an air fryer, which allows us to reduce cooking times while keeping the meat tender and juicy, but below you will also find instructions for making it in the oven.

Lamb with potatoes requires few ingredients; we just need to take the herbs for the marinade, the preferred cut of lamb (I chose the leg) and some potatoes that pair perfectly with this dish. Everyone at the table will love this dish, and they’ll want seconds!

Ingredients

  • 1.76 lbs lamb (leg cut into pieces)
  • 14 oz potatoes
  • 1 tbsp juniper berries
  • 1 tbsp black peppercorns
  • 5 leaves bay leaves
  • 5 sprigs rosemary
  • 2 cloves garlic
  • 1 glass white wine
  • to taste extra virgin olive oil
  • to taste salt

Steps

  • Place the lamb leg pieces in a bowl and add the herbs: juniper berries, whole peppercorns, bay leaves, rosemary, and two cloves of garlic. Add a drizzle of extra virgin olive oil and cover with white wine; mix well to combine all the flavors. Cover with plastic wrap and marinate in the refrigerator for 2 hours. In this way, all the flavors will penetrate well, and the meat will have a special taste.

  • Meanwhile, prepare the potatoes; peel and dice them. Retrieve the lamb and discard the marinade liquid. Transfer the lamb to the basket of the air fryer, add the potatoes around (without overlapping them too much with the meat) and the marinade herbs. Finish with a drizzle of extra virgin olive oil on top and a pinch of salt on the meat and potatoes.

  • Cook in the air fryer at 356°F for 40 minutes, turning everything several times during cooking, or in a preheated oven at 374°F for about 1 hour.

Tips for you

✔ It is necessary to cook the lamb with potatoes directly in the air fryer basket without trays or parchment paper: this way they will cook thanks to the air that circulates 360 degrees from bottom to top, allowing for ideal air frying. Trays or parchment paper would be an impediment as they would block the air circulating inside the air fryer.

➔ In this way, the fat from the meat will drip underneath through the basket’s holes.
