Ingredients
- 14 oz pumpkin (butternut, delica or other type)
- 2 tablespoons grated Parmesan cheese
- 1/2 cup all-purpose flour
- 2 oz provola cheese
- A few leaves basil
- to taste breadcrumbs
- to taste extra virgin olive oil
- to taste salt

Steps
Cut the pumpkin into cubes. Transfer it to the air fryer and cook at 355°F for 20 minutes. If desired, you can cut it in half and cook directly like that, in this case at 355°F for 25-30 minutes.
Alternative
Baking the cubed pumpkin in the oven: 375°F for 30 minutes.
Cooking the halved pumpkin in the oven: 375°F for 40 minutes.
Once ready, put the cooked pumpkin in a mixer and add the grated Parmesan, flour, and salt, then blend until you get a thick and homogeneous mixture. Meanwhile, cut the provola into not too large slices.
With wet or oiled hands, take a spoonful of the mixture and shape it into a cutlet by passing it between your hands. Place a slice of provola in the center and cover with more mixture, then close all sides well. Repeat with the rest of the mixture to obtain about 4 cutlets of approximately 4 inches.
Coat the cutlets in breadcrumbs and then transfer them to the air fryer; add a spray of extra virgin olive oil and cook at 390°F for 12 minutes, turning them halfway through.
Alternative
You can cook the cutlets in a pan with a drizzle of oil until golden, turning them halfway through.Serve with some basil leaves and enjoy while still hot. Bon appétit.

✔ You can choose the type of pumpkin you prefer, such as butternut as I did, or delica, which is suitable for any type of preparation.
✔ The pumpkin can be cooked halved or in cubes. Both cooking instructions are found in the recipe.
✔ The cutlets can be cooked in an air fryer or in a pan.
✔ For this recipe, it is necessary to cook the cutlets directly in the basket of the air fryer without trays or parchment paper: in this way, they will cook thanks to the air passing 360 degrees from below to above, allowing ideal air frying. Trays or parchment paper in this case would be an impediment as they would block the circulating air inside the air fryer.
✔ The oil sprayer I used is available in supermarkets. I recommend one of these because their spray is truly nebulizing and controlled, plus it’s really excellent. You can find some by clicking here.
