Milk and Cookie Cake in Air Fryer

The milk and cookie cake is one of the easiest recipes ever, it’s super quick to make and requires only 3 main ingredients: milk, cookies, and baking powder. It’s the perfect cake for Italians, who never give up on a breakfast with milk and cookies. Inside it will be soft and moist, with a dreamy texture. Everyone will love it, both young and old. You can prepare it in a few minutes, and you can choose to bake it in the oven or in the air fryer as I did.

Let’s see how to make a delicious cake using the cookies we like the most (plain, cocoa, fruit, etc.) and the milk. You can choose regular or plant-based milk. For example, I used highly digestible milk, so lactose-free. As for the quantities, it’s really simple: just use the same amount of cookies and milk. To decorate, you can use powdered sugar and the fruit of your choice, especially if you choose fruit cookies.

Ingredients

  • 11.6 oz cookies (as you prefer)
  • 1.4 cups milk (regular or plant-based)
  • 1 packet baking powder (16 g)
  • to taste powdered sugar
  • to taste blueberries
  • to taste red currants

Steps

  • First, we transfer the cookies to a mixer and finely grind them. Add the baking powder and the milk, then blend again until you get a smooth mixture.

    Preheat the air fryer for 2 minutes at 320°F. Line a pan with parchment paper (or you can grease and flour the cake tin) and pour in the mixture.

  • Bake the cake in the air fryer at 320°F for about 30-35 minutes. You can also bake it in the oven at 356°F for 35-40 minutes. Do the toothpick test.

    Once ready, remove it from the cake tin and let it cool.

    At this point, sprinkle with powdered sugar and decorate with whole cookies, red currants, and blueberries.

Tips for you

✔ Let the cake cool on a wire rack or alternatively upside down, so it doesn’t get soggy on the bottom.

✔ You can use the milk of your choice, from regular to lactose-free or your favorite plant-based drink.

✔ You can decorate it with hazelnut cream or any other fruit you like.

✔ If you use a 9-inch cake tin, I recommend increasing the quantities, in this case, 14 oz of cookies and 1.7 cups of milk.
