  • 1.5 cups sugar
  • 1/2 cup honey
  • A few drops lemon

  • 1 Spatula spatula

  • 1 Parchment Paper parchment paper
  • 1 Pot steel pot

Procedure for Easy Almond Brittle

  • To prepare easy almond brittle, let’s start by toasting the almonds. I used shelled, unpeeled almonds because I prefer them.

    You can use your preferred toasting method. I toasted them in the microwave. I placed the almonds separately in a baking tray and sprayed them with extra virgin olive oil. Then, I put them in the microwave on maximum temperature for 1 minute. I took them out, let them cool slightly, and repeated the process 2 more times.

  • Now it’s time for the caramel. In the steel pot (or a regular one, as long as it’s not enameled), pour in the sugar, honey, and lemon drops. Place over medium heat and stir to dissolve everything well. It will be ready when it is slightly amber (to be precise, we need to reach 284°F), and we should not let it crystallize or overcook. At this point, pour the warm almonds into the pot and mix well to spread all the caramel over the almonds.

  • While still warm, pour the almonds onto the baking tray covered with parchment paper and using a spatula or spoon, spread them well and shape them into a rectangle. Now we can let them cool and solidify at room temperature.

  • Once everything is well cooled, we can cut the shape of our bars with a sharp knife.
    Almond brittles are now ready.
