Bruschetta is perfect as an appetizer or a quick lunch; it’s delicious, crunchy, and can be topped in many different ways. In this recipe, we will see how to prepare confit tomatoes to top the bruschetta along with burrata (or stracciatella) and Taggiasca olives for a bold flavor mix that will win everyone over. We will cook the bruschetta for a few minutes in the air fryer, and as you will see, they will be crunchy in no time. We will also cook the confit tomatoes in the air fryer: in this way, it will only take 20 minutes instead of the 2 hours needed in the oven, thus saving time and energy. Ingredients
- 1 baguette or leftover bread
- 4.2 oz stracciatella or burrata
- to taste salt
- to taste extra virgin olive oil
- to taste Taggiasca olives
- 10 piccadilly tomatoes
- 1 tsp granulated sugar
- 1 pinch salt
- 2 cloves garlic, unpeeled
- 1 drizzle extra virgin olive oil
- to taste dried oregano

Steps
First, cut the bread into slices. You can use a baguette or some leftover bread. Place the slices in the air fryer basket and top them with a drizzle of extra virgin olive oil and a pinch of salt. Cook in the air fryer at 392°F for about 7 minutes.
Meanwhile, prepare the confit tomatoes. Wash and dry the tomatoes (I used piccadilly type). Cut them in half and place them in the air fryer basket on parchment paper (necessary here) with the cut side up. Sprinkle the surface with a teaspoon of granulated sugar, a pinch of salt, a drizzle of evo oil, and dried oregano. Cook in the air fryer at 320°F for the first 10 minutes, then 356°F for 5 minutes, and finally 392°F for 5 minutes; a total of 20 minutes is needed. You can also do it in the oven, in this case, cook the confit tomatoes at 284°F for 2 hours. I recommend air frying because it saves both time and electricity.
Once ready, we can start assembling our bruschetta. Add the confit tomatoes, burrata or stracciatella, Taggiasca olives, and a sprinkle of dried oregano.

Tips for you:
✔ It is necessary to cook the bruschetta directly in the basket of the air fryer without trays or parchment paper: this way they will cook thanks to the air circulating 360 degrees from bottom to top, allowing for ideal air frying. Trays or parchment paper would block the air circulation inside the air fryer.ù
✔ I recommend using a BBQ mesh to place directly in your air fryer’s non-stick basket: the mesh protects the basket’s non-stick coating (keeping it like new) and allows the food to cook evenly, allowing air to pass through 360 degrees.

✔ For cooking confit tomatoes in the air fryer, we need to use parchment paper which allows for an ideal cooking process for this type of recipe. As you saw from the procedure, it will only take 20 minutes. You can always choose to cook the confit tomatoes in the oven, in which case the time extends to 2 hours of cooking.
