The aroma, the crunchiness of the walnuts, the sweetness of the honey with the raisins sharply contrasting with the bitterness of the radicchio leaves, well, are you still here reading? A seasonal side dish from November through March, with some lingering in April if temperatures aren’t too high. I chose Chioggia Radicchio but you can obviously make this side dish with other varieties of radicchio. I prefer it because it’s less bitter, in fact, my dear greengrocer taught me: the redder the leaf, the less bitter it is.
Recently, I suggested a radicchio lasagna that was quite good, with indispensable walnuts, and I enriched the dish with some gorgonzola, making my mouth water again. Then, returning from Spain, I realized that I was increasingly appreciating the winning trio of the Tapas with Goat Cheese, namely honey, walnuts, and raisins. So I asked myself: what can you do to use all three of these ingredients? Initially, I thought of a crostini but I don’t enjoy eating bread, in fact, I struggle immensely. So then I thought of some vegetables, some produce. Zucchini but it was already sweet on its own, and then a beautiful head of radicchio appeared before me, with its enticing purple colors saying: pick me, pick me. And could I say no? So, returning by bicycle from the greengrocer, I was already savoring my recipe.
I left the radicchio in the fridge for a day after washing it to stiffen the leaves a bit. Then I prepared this side dish. Here is the easy, quick, and delicious video recipe just the way we like it!

Ingredients for Baked Radicchio with Honey
- 14 oz Chioggia radicchio
- 10 walnut halves (more or less)
- 20 raisins (more or less)
- to taste honey (I put to taste because feeling does not exist as a quantity of honey)
- to taste extra virgin olive oil (always to taste)
- 1 pinch salt
If you want, add a pinch of pepper, but I didn’t use it. The quantities listed are for two people.

Steps for Baked Radicchio Recipe with Walnuts
Let’s start the recipe by washing the radicchio whole under the running water in the sink, then move to the work surface and place our red head on a wooden cutting board. With a knife, cut slices from my nice little ball, I cut 6 slices about an inch thick. Return again to the sink and pass slice by slice under the water. Place the radicchio back on the cutting board.
Turn on the oven in static mode and set it to a maximum of 350 to 375 degrees Fahrenheit. Wait for it to reach this temperature before proceeding. Meanwhile, place a sheet of parchment paper in a rectangular baking dish and place it in front of you on the work surface.
Arrange the radicchio slices in the baking dish well spaced apart. Break the walnuts and place them on the slices. I left them in medium-large pieces, to maintain the right and crunchy crunch effect. Then place the raisins directly on each slice of radicchio. Sprinkle with salt, if you want, add some pepper (I didn’t add any).
Then drizzle everything with a thread of extra virgin olive oil and with the tasty touch of honey. Both quantities are to taste, I can’t tell you precisely how many grams I used of each ingredient. I’ll let you play with the quantities.
Enriched with all the ingredients, we’re ready to bake the radicchio. Place the baking dish in the center of the oven and bake for about 15 minutes. If you see the radicchio slices curling or starting to burn too much, immediately lower the oven temperature. We like crunchy radicchio but not burnt.
My advice is to serve it hot, so you can even more appreciate the aroma of the warm honey, the sweetness of the raisins, and the crunchiness of the walnuts. Then don’t say I didn’t warn you that it’s preferable as a hot side dish rather than a cold one.

Variations of Baked Radicchio with Honey Recipe
You can certainly replace walnuts with pecans or Brazil nuts. I think the result would be delicious, but the product price is certainly different. Alternatively, you can always use other variants of dried fruit, maybe cashews, pistachios, or peanuts. As for the honey, I would keep it as its flavor softens the bitterness of the radicchio, and I really like that.
