Ingredients for 8 Filled Puff Pastry Doves
- 1 sheet puff pastry (rectangular)
- as needed milk (or egg white)
- as needed sesame seeds (for the savory version)
- 4 slices bresaola
- as needed salad (for the savory version)
- 2 tablespoons Nutella® (for the sweet version)
- as needed powdered sugar (for the sweet version)
I have listed the ingredients for both versions, obviously if you decide to prepare only one of the two you will need to increase the doses of bresaola or Nutella.
Tools to prepare the Puff Pastry Doves
- 1 Cutting board
- 1 Knife
- 2 Baking sheets
- 2 Parchment paper
- 1 Cookie cutter
- 1 Oven
- 1 Brush
- 1 Small bowl
- 1 Cooling rack
For the Dove stencil you can draw it freehand on a rigid cardboard as I did, or rather as my colleague Ramona did. In fact, I asked her to make the Easter Doves for this recipe. You can draw it freehand as she did or print a drawing from the web and cut it out with scissors. After the Carnival Masks, I didn’t feel ready yet to exaggerate with a more complicated drawing. Unfortunately, I’m not good at drawing.
Steps for the Filled Puff Pastry Doves Recipe
The first thing to do, as I explain in the video recipe found below the first photo, is to preheat the oven in static mode to 356°F. Preparing this recipe is very simple and quick, and we will need the oven to be nice and hot.
Let’s take the Dove stencil we prepared and start. Roll out the rectangular sheet of puff pastry on a wooden cutting board. Then take a pointed knife without serrations and cut the pastry with the cutter. In total, I made 8 Easter Doves to fill. They are about 2.75 inches in size. Perfect as an appetizer or dessert. Not too big, but we will still have enough space to fill them well.
Place the Puff Pastry Doves directly on the baking sheets where we have placed sheets of parchment paper. Now take some milk or an egg white and, using a kitchen brush, brush the surface of the doves. Bake for about 20 minutes. You will see that the puff pastry will puff up slightly, becoming beautifully golden. The second batch was ready around 18 minutes. So, monitor the golden color of the doves during baking to avoid hardening the pastry too much.
Once baked, place the doves on a cooling rack to allow them to cool before proceeding with the cutting.
After the necessary time has passed, we can proceed with cutting them in half. Gently score along the outer part of the pastry, using a pointed knife without serrations. This step is delicate because we must avoid breaking them, thus losing the shape we gave the pastry.
Now decide whether to fill the doves with cold cuts or with delicious creams. You can choose the ingredients I used or let your imagination run free. After filling them, reassemble the Doves and serve them to your family or guests. Aren’t they super cute?
