Steps for making wraps with tortillas and omelette
In a bowl, break two eggs for each tortilla. Quickly beat them with salt and chives. Pour them into a hot pan with extra virgin olive oil. When the omelette starts to set, cover it with the tortilla and flip the omelette so the tortilla is in contact with the bottom of the pan.
Place cubes of mozzarella in the center and cook for one minute.
Place the tortilla on a plate or a cutting board. Add the lettuce and tomato chunks in the center (you can use whatever vegetables you like). Fold the side edges inward, then the top and bottom. Serve.
Storage
You can store the tortilla in the fridge for one day.
