HOMEMADE COOKIE ICE CREAM WITH 3 INGREDIENTS, THE CLEVER SUMMER RECIPE
Summer has arrived, and making this super quick cookie ice cream, with just three ingredients, is the recipe for your summer.
How we love homemade ice cream, easy and quick: you feel like it, you make it, rest in the freezer, and enjoy: Easier than this!!
My kids loved it, and I’m here to tell you: WRITE DOWN the ingredients, run to the supermarket if you don’t have them, because soon they’ll become a delicious treat.

Ingredients
- 7 oz whipping cream (lactose-free for me)
- 1 container Greek yogurt (stracciatella)
- 40 cookies, shortbread (square)
- 5 oz dark chocolate
Tools
- Electric whisks
- Parchment paper
- Baking pan
Steps
First, in a bowl or the mixer bowl, pour the Greek yogurt (I used stracciatella), helping with a spatula.
Add the cream and start whipping with the electric whisks, if using the mixer with a whisk attachment.
Continue whipping until a firm consistency is achieved, then let it rest in the fridge while you prepare the base.
In a baking pan or dish, cover with parchment paper (or plastic wrap if preferred) and arrange the cookies in a row.
At this point, pour the cream that was resting in the fridge and cover with an equal number of cookies.
I managed to make 5 rows of 4 cookies.
Now, let it rest in the freezer for an hour, or even better, two!
Once the time is up, take it out of the freezer and cut along the edge of the cookies.
I then decided to decorate with dark chocolate melted in a bain-marie: dip half of the cookie and let it harden for another half-hour in the freezer.
