Today I decided to offer you another main course with eggplants as the main ingredient! As you know, for two years I have learned to eat them, before I didn’t even want to see them in photos. Now, however, I eat them and also prepare many easy and economical recipes with this precious vegetable that is in season from June to September. So take advantage until they’re gone! I chose to present this recipe because my uncle Mauro brought me lots of eggplants, perfectly round and violet. I had already seen a recipe for Eggplant Tacos but they almost always contained cheese or tomato, and I had already prepared the eggplant parmesan and the stuffed eggplant boats, I didn’t want to be too repetitive. So I thought of this simple and economical recipe version with only minced meat, an egg, and lots of fresh herbs from my balcony garden. A small corner of herbs to bring to my dishes every day.   • 5.3 oz mixed minced meat
  • 1 egg
  • as needed breadcrumbs
  • 1 pinch salt
  • 1 pinch black pepper
  • as needed extra virgin olive oil
  • 1 sprig rosemary
  • 1 sprig oregano
  • 1 pinch coarse salt (in my case Himalayan coarse salt)

The low-calorie content of eggplant and its rich amount of water and minerals, like potassium, phosphorus, and calcium, make it perfect for those following a low-calorie diet. Additionally, it’s rich in vitamin C, antioxidants, chlorogenic acid, and anthocyanins. In short, not only are eggplants tasty, but they’re also good for you!

Recipe Steps for Eggplant Tacos:

  • Let’s start the preparation of the Eggplant Tacos with minced meat by preheating the oven in static mode at 350 degrees Fahrenheit. Then take a wooden cutting board and a non-serrated knife. Cut off the pointed end of the eggplant, the one with the green part to be precise.

    Now we need to cut slices, either with a mandoline if you have one or with a knife as I did. In the video recipe, which you can see above, this step is shown. Once the eggplant slices are obtained, proceed with the preparation of the filling for our tacos.

    Then take a bowl and pour the minced meat into it, break the egg, add salt and pepper. Add breadcrumbs, if you’re afraid of adding too much at once since the quantity is to taste, start by adding a few handfuls and then if necessary another two. Sprinkle with the herbs, in my case they are fresh from my balcony garden, otherwise, you can use dried herbs found in glass jars at the supermarket. Work everything with your hands until a good consistency is reached. You should have a sticky and soft mixture, as we will later need to spread it with hands or a knife.

  • Indeed, now take the eggplant slices and place the minced meat on them, then fold them in half and skewer them with the wooden skewers. I placed three eggplant tacos on each skewer. Obviously, this recipe is designed for two people, if you have more family members or more dinner guests you will need to double or triple the doses. Then place the skewers with the tacos on a baking tray that we will have lined with a sheet of parchment paper. Drizzle the surface of the eggplants with a little extra virgin olive oil, I also added a few pieces of pink Himalayan salt, and bake for about 25 to a maximum of 30 minutes. My partner suggests adding: either a sprinkle of cheese or some chunks of mozzarella, he likes them more with the melted cheese.

    After the cooking time, we are ready to serve our Eggplant Tacos with Minced Meat. A tasty, easy, and quick main course to prepare. Above all, an economical dish. Variations of Eggplant Tacos:

You can vary the filling of the Eggplant Tacos, from meat to tuna for example. Add cheese as my boyfriend would have preferred. But I wanted to try them without it, so we did without it, democracy first of all in the kitchen haha. You can add a few tablespoons of tomato sauce.
