BLUEBERRY JAM READY IN A FEW MINUTES
I love almost all types of jams, but this blueberry one is really so good and easy to make.
A couple of days ago, the kids brought home two boxes of blueberries from school for the fruit in schools project, and since they had seen better days (half of Lella’s box spread on the bottom of the backpack), I decided to make a quick jam to enjoy these days with a nice homemade LOAF BREAD.
NB!! I did not follow the full procedure described by the ministry as it is not a preserve; if you decide to make more jars, be sure to sterilize and pasteurize them.

Ingredients
- 1 cup blueberries
- 1/2 cup sugar
- Half lemon (juice)

- Pot
- Lemon Squeezer
Steps
Wash your blueberries well under running water, dry them, and pour them into a small pot.
Then add the sugar and the juice of half a lemon.
Cook on low heat, stirring occasionally.
If needed, pour half a glass of hot water, it will help the cooking.
There are few blueberries, so it will take about 25 minutes to form, otherwise wait a little longer.
I then slightly mashed with a fork because I like it chunky, otherwise use an immersion blender.

Storage
It keeps for several days in the refrigerator: REMEMBER IF YOU WANT TO MAKE JARS YOU MUST PROCEED WITH THE STERILIZATION OF THE JARS AND THEN PASTEURIZATION.
