Ingredients

Ingredients for 9 Pumpkin Croquettes

  • 3 lbs delica pumpkin (or mantovana)
  • A few sprigs rosemary
  • A few leaves sage
  • 1 drizzle extra virgin olive oil
  • pumpkin (previously cooked)
  • 1 egg
  • 1/2 cup Grana Padano cheese, grated
  • 5 amaretti
  • 1 bunch chopped parsley
  • to taste salt
  • to taste pepper
  • to taste nutmeg
  • 2.5 oz soft table cheese
  • A few sprays extra virgin olive oil
  • 1/2 cup breadcrumbs
  • 1/4 cup sesame seeds

Steps

Preparation of pumpkin croquettes in air fryer

  • Cut the pumpkin into slices and place them on the grill or tray of your air fryer. Add a few sprigs of rosemary and a few sage leaves, and drizzle with extra virgin olive oil

  • Insert the grill or tray into the air fryer and start the air fry program at 355°F for 17 minutes

  • Check the cooking by piercing the flesh with a toothpick or the tines of a fork. The pumpkin flesh should be soft. Continue if necessary for a few more minutes. Let it cool slightly

  • Once the pumpkin has cooled, remove the skin and transfer it to a bowl, mashing it with a fork

  • After making the pumpkin into a puree, add the ingredients: the Parmesan, the egg, salt, pepper, and nutmeg

  • Chop the amaretti with the chopper and add them to the mixture

  • Chop the parsley and add it as well

  • Mix and blend well. Let the mixture rest in the refrigerator for a couple of hours

  • After resting in the fridge, take a portion of the mixture and place a piece of cheese in the center, choose a soft cheese that will melt easily during cooking

  • With another portion of the mixture, cover to form your croquette. Continue until the mixture is finished

  • In a baking tray or plate, pour the breadcrumbs with the sesame seeds and coat the croquettes well. Once this step is completed, transfer the croquettes to the freezer for 10 minutes to firm up and prevent them from breaking during cooking

  • Arrange the croquettes on the air fryer grill without overlapping them and spray a little oil

  • Insert the basket or tray and start cooking at 400°F for 12 minutes

  • After cooking, check if they are golden enough and remove the basket, otherwise continue for a few more minutes

  • The Pumpkin Croquettes are ready to be enjoyed🤤You can serve them like me, accompanied by a Greek yogurt sauce, prepared with sweet paprika, chives, and grated lemon zest

Advice and Variations for Pumpkin Croquettes


If the mixture is too soft, add some breadcrumbs
You can substitute the amaretti with breadcrumbs if you want a less sweet version.
For a stronger flavor, use gorgonzola or taleggio as the melty center.
They rarely last, but if you need to store them, cover them with cling film or put them in an airtight container in the refrigerator for 2/3 days, always reheat them in the air fryer, give a few sprays of oil and they will be crispy as just made

I added sesame seeds to the breadcrumbs to give a little more crunchiness, but you can omit them, they will be delicious anyway
