The recipe for the molten lava cake is very simple, in fact, we will only need a tablespoon, no scale, for an even easier version to make. I’ll explain how to cook them to perfection in an air fryer, following a few simple tricks. Alternatively, you can bake them in an oven increasing the temperature and cooking times (below you’ll find all the instructions).

The air fryer molten lava cake is super quick to make, just a few minutes, and it’s really easy: once you’ve tried it, you’ll love it too. These cakes are perfect for a snack or a delicious after-dinner treat, or as a Valentine’s Day dessert. This recipe makes two cakes, but you can multiply or triple the quantities as you like.

Ingredients

  • 1 egg
  • 1 tablespoon all-purpose flour
  • 1 tablespoon sugar
  • 1 tablespoon hazelnut spread
  • as needed unsweetened cocoa powder
  • as needed butter
  • as needed powdered sugar

Steps

  • In a bowl, pour one egg, one tablespoon of sugar, one tablespoon of flour, and one tablespoon of hazelnut spread (or the flavor you prefer). Mix well with a hand whisk until a smooth consistency is achieved.

  • Take the aluminum molds, butter them, and sprinkle with unsweetened cocoa powder to prevent the cakes from sticking during cooking.

    Pour the mixture into the two molds. Remember: do not preheat the air fryer, it must be cold.

  • Transfer the cakes to the air fryer and cook at 375°F for 7 minutes. Invert the cakes onto a plate immediately: do not leave them in the molds, or they’ll continue to cook, and you’ll end up with muffins! Garnish with some powdered sugar, and with a teaspoon, perform the test: inside they will have a soft and warm center.

    Alternatively, you can bake them in a preheated oven at 400°F for about 13 minutes.

Tips, Variations, and Storage

✔ Molten chocolate cakes should be eaten warm, so… don’t wait and let yourself be carried away by their irresistible charm!

✔ You can choose the chocolate cream you prefer: you can opt for a nice filling of hazelnut cream, pistachio, white chocolate… there are so many flavors, try them all and let me know!

✔ Remember: do not preheat the air fryer: for this recipe, the fryer must be cold, with the described degrees and times. If you’ve already used it (and it’s hot) or you need to make a second batch, I recommend lowering the temperature to 355°F or reducing the cooking time by 1 minute.

IMPORTANT: once ready, remove them immediately from the molds, otherwise they will continue to cook, and you’ll end up with muffins! Invert them immediately onto a plate as soon as they’re done.

✔ If the center turns out to be less soft, or conversely too runny, try increasing or decreasing by one or two minutes. It might depend on the air fryer.

✔ You can choose to freeze the prepared molds and take them out when needed: in this case, cook them directly from frozen at 400°F for 8-9 minutes.
