I’m not sure whether to call this a recipe for baked vegetables with bacon or simply say that often small bowls with a mix of already boiled vegetables are left in the fridge forgotten forever.

October 16 was World Food Day and on the blog’s fan page I had posted many fridge-clearing recipes, so here is this mix of baked vegetables and vegetables with cheese and bacon.

Ingredients for baked vegetables for two people:
in my fridge I had the following ingredients
- 1.76 oz broccoli head, cooked, boiled
- 1.76 oz cauliflower, cooked, boiled (white)
- 1.76 oz Brussels sprouts (cooked, boiled)
- 1.76 oz green branched broccoli, raw
- 4 slices bacon
- to taste cheese (grated, of your choice)
- to taste black pepper
Tools for Baked Vegetables
- 2 Terracotta dishes
- 1 Oven
Preparation of Baked Vegetables:
Obviously the vegetables must already be boiled otherwise the preparation time for this recipe is longer. To do this, however, remember not to exceed about 7 minutes of boiling. You can also steam or microwave the vegetables. In the first case, you will take about 5 minutes, in the second case about 7 minutes. Use very little water and a sprinkle of salt.
We turn on the oven in static mode at 356°F
We lightly oil the terracotta dishes and place the bacon slices on the edges and then the already boiled vegetables in the center.
We sprinkle with pepper and bake for about 20 minutes.
After this time, we will add the grated cheese of your choice, change the oven mode from static to grill, and place the dishes back in the oven for another 5 minutes. The surface of the vegetables should be slightly grilled.
The side dish with forgotten winter vegetables in the fridge is ready, a quick, easy, and no waste recipe.

Variations:
Don’t want to use bacon because it’s too fatty? You can replace it with cooked ham or speck. For the choice of cheese, in my case it was simple parmesan, you can use a mix of cheeses or the always excellent pecorino which adds even more flavor to the dish.
